Instructions

• Wash and dry produce.  • Thinly slice jalapeño into rounds, removing ribs and seeds for less heat. Dice tomatoes into ¼-inch pieces. Roughly chop cilantro leaves and stems. Halve, peel, and dice onion into ¼-inch pieces. Quarter limes. Trim and discard root end from lettuce, then thinly slice.

• In a small microwave-safe bowl, combine jalapeño, vinegar, ¼ tsp sugar, a splash of water, and a pinch of salt. Stir to combine. Cover with plastic wrap; microwave for 45 seconds. Keep covered until ready to serve.

• In a second small bowl, combine tomatoes, cilantro, 2 TBSP onion, and juice from two lime wedges. Season with salt and pepper. Stir to combine.

• Add refried beans to a small pot over medium-low heat. Cover and cook, stirring occasionally, until beans are warmed through, 8-10 minutes. • Top refried beans with a sprinkle of Mexican cheese blend (be sure to save some cheese for serving with the taco bar!). Keep covered until ready to serve.

• While refried beans cook, heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add beef* and remaining onion. Cook, breaking up meat into pieces, until cooked through, 4-6 minutes. TIP: Carefully drain off any excess fat if needed. • Stir in Mexican Spice Blend and cook until fragrant, 1-2 minutes more.

• Combine queso blanco and 1 TBSP water in a medium microwave-safe bowl. Cover with plastic wrap and microwave on high until warm, 30-40 seconds. Stir to combine. • Wrap tortillas in damp paper towels and microwave on high until warm and pliable, 30-60 seconds. TIP: Keep your tortillas warm for serving by wrapping in a kitchen towel after microwaving.

• Serve shredded lettuce, pickled jalapeño (draining first), pico, refried beans, beef, queso, tortillas, guacamole, sour cream, and remaining Mexican cheese blend family style and let everyone build their own tacos. Serve tortilla chips and remaining lime wedges on the side. TIP: Add some extra crunch to your tacos by crushing up a few tortilla chips and sprinkling on top!

Ground beef is fully cooked when internal temperature reaches 160°.
