Move over Shrek, our favorite thing that’s green is salsa verde. And these bowls really show off that spicy green sauce. You’ll just toss black beans, salsa, tomato, and pepper jack cheese on fluffy rice, then throw that bowl in the microwave. Then it’s time to channel your inner lunch-artist and top the steamy bowl with even more salsa and as much guac and sour cream as you like. Trust us, your lunch crew’s about to turn green with envy.

Instructions

Microwave rice according to package directions. Divide between microwave-safe bowls or to-go containers.

Drain and rinse beans thoroughly; place in a medium microwave-safe bowl. Stir in half the salsa (save the rest for serving). Microwave until warmed through, 30 seconds. Divide between bowls with rice.

Wash and dry all produce. Finely chop tomato. Halve lime.

Top bowls with tomato and pepper jack.

Before serving, microwave bowls until pepper jack has melted, 45 seconds. Dollop with guacamole and sour cream. Serve with hot sauce and lime halves on the side. Top with extra salsa if you like!
