Peruvian cuisine is a veritable treasure trove of flavors, often capturing tangy, creamy, bold, and spicy nuance all on one plate. In this incredible seafood dish, our chefs showcase that very breadth of deliciousness. A mahi filet, marinated for hours with ají amarillo, chili powder, and cumin, is cooked until perfectly tender and flaky, then served atop creamy red pepper cauliflower “grits.” Broccoli florets with a chili-garlic compound butter bring more flavorful range. Our ají verde sauce—made with jalapeño, cilantro, cotija, lime juice, and avocado mayo—is the true gem of the meal, making every element sing with rich, bright heat.

Ingredients: mahi mahi, broccoli, riced cauliflower, avocado oil mayonnaise (avocado oil, organic certified humane free range egg yolks, water, distilled vinegar, salt, lime juice concentrate, citric acid, lime oil), heavy cream, olive oil, onions, cilantro, cream cheese (pasteurized milk and cream, cheese culture, salt, guar gum, carob bean gum, xanthan gum), diced red peppers (red sweet pepper, water, citric acid), unsalted butter (pasteurized cream, natural flavorings), grated parmesan cheese ((parmesan cheese (pasteurized cow’s milk, cheese culture, salt, enzymes), water, milk protein, modified food starch, palm oil blend, salt, disodium phosphate, citric acid, xanthan gum), and calcium propionate (preservative)), garlic, grated cotija cheese (pasteurized whole cow's milk, salt, enzymes and culture), lime juice, jalapeño peppers, aji amarillo chile powder (dried aji amarillo chiles, silicon dioxide (anti-caking agent)), sea salt, black pepper, toasted minced garlic, guajillo chile powder, gochugaru chile flakes, white pepper, cumin, granulated garlic
