
A tasty, balanced kids’ lunch in 15 minutes? That may sound like a dream, but we’re bringing it to life! You’ll roll up easy-melting shredded mozzarella and zingy pepperoni in flour tortillas, then sizzle them in a hot pan until crispy. Serve the roll-ups with juicy apple slices, crisp cucumber wheels, a chewy-sweet dried fruit medley, and a buttermilk ranch dipper. The kicker? You’ll spend less time shopping, planning, and cooking for your family, and more time hanging out with them! This recipe is designed to provide lunch for multiple days. For each lunch meal, 3 servings and 6 servings are provided for a 2 person and 4 person box respectively.

• Wash and dry produce. • Halve, core, and thinly slice apple. Trim and thinly slice cucumber into rounds. • In a small bowl, combine dried apricots and dried cranberries.

• Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds. • Place tortillas on a clean work surface. Evenly sprinkle bottom two-thirds of each tortilla with mozzarella, then top with as much pepperoni as you like. • Roll up tortillas, starting with filled sides, to create roll-ups (they’ll be open at the ends).

• Heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. • Add roll-ups, seam sides down, to hot pan. Cook until lightly browned, 1-2 minutes per side.

• To serve: Trim off curved short edges from roll-ups; discard edges. Slice each roll-up crosswise into 8-10 pieces. Divide between plates; serve ranch dipper, apple slices, cucumber rounds, and dried fruit mix on the side. • To stash: Let roll-ups cool completely, then slice each roll-up crosswise into 8-10 pieces. Refrigerate everything in separate airtight containers and pack as desired!

Loved these! I order a kids meal weekly as light dinners for me. This was enough for four meals. Yummy!
Super fun and easy. Only complaint would be they gave one baby cucumber to be split between two people. It was only 3 slices a person.
More cheese! And we added marinara sauce on the side to dip. Everyone loved it but more cheese was definitely requested

TOO SPICY for kids! Poor choice. They refused. We adults thought it was too spicy for us also.
