Curry is one of the oldest and most beloved culinary traditions on the planet, with roots stretching across South Asia, Southeast Asia, the Caribbean, and beyond. The word itself is thought to derive from the Tamil word "kari," meaning spiced sauce, and today it encompasses an extraordinary range of regional styles. Indian curries lean on warming spice blends like garam masala, turmeric, cumin, and coriander, building deep, layered sauces from tomato, onion, and aromatics. Thai curries, by contrast, rely on fresh curry pastes (green, red, or yellow) combined with coconut milk for a silky, aromatic broth.
