
This wholesome quickie breakfast idea has layers and layers of delicious flavors and textures. It starts with creamy, tangy honey yogurt that’s topped with our sweet berry compote, then crunchy toasted cashews and coconut, and fluffy toasted Belgian waffle pieces. Serve it in a glass container for the full parfait effect. This satisfying crowd pleaser all comes together in just 15 minutes leaving you with lots of extra morning time we’re sure you’ll make good use of—absolutely par-fect!

Berry Compote

• Toast waffles until golden. Drop honey (in packet) in a small bowl of warm water to soften. Roughly chop cashews.
• Heat a medium dry pan over medium-high heat. Add cashews and coconut; cook, stirring frequently, until lightly browned and fragrant, 2-4 minutes. (TIP: Keep a close eye on pan to avoid burning.) Transfer to a plate.
• Once waffles are toasted, cut into ¼-inch pieces.
• In a second small bowl (medium bowl for 4 servings), whisk together yogurt, crème fraîche, honey, and a pinch of salt until well combined.
• If using jars, divide half the honey yogurt between jars. Top with half the berry compote, half the toasted cashews and coconut, and half the waffle pieces. Repeat to make a second layer. If using bowls, divide honey yogurt between bowls. Top with berry compote and toasted cashews and coconut. Place waffle pieces in the center. Serve.
Too sweet if made as directed. I left the honey out of the second portion. The berry compote is plenty sweet enough and the waffle is also sweetened. Also way too many calories and too much sugar for such a small portioned "meal". Needed more protein. Maybe replace the yogurt with Greek yogurt in the future.
Delicious and easy. I like the waffles have a slight crunch to them. Wish the compote was in a container rather than baggie so it's easier for a single person to store it for later portioning.
This should be a constant menu item- the waffles were a heavenly touch I would never have thought of it yogurt! The toasted cashews were phenomenal.

Tasty. Better quality ingredients like yogurt and preserves .. and maybe some fresh fruit might make it better. As is it's a little too sweet for a breakfast item, cloying without as much flavor.
Only thing I wasn't a fan of was the shredded coconut. Otherwise it was great!!
