When the kids get hangry, you need something on the table STAT and we’ve got just the thing: a 15-minute kid-approved sammie—plus dips. You’ll assemble grilled cheese sandwiches on garlicky flatbread (similar to a pizza crust) and cook until golden and melty. Cut into squares perfect for little hands, and serve along with cucumber rounds, carrot sticks, mandarin orange segments, and chocolate chips. The best part of all? Three (three!) sauces for a dippin’ good time: savory marinara, good ol’ ketchup, and smoky-sweet barbecue. Less time shopping, prepping, and cooking = more time for you and yours.

This recipe is designed to provide lunch for multiple days. For each lunch meal, 3 servings and 6 servings are provided for a 2 person and 4 person box respectively.

Wash and dry produce. Thinly slice cucumber into rounds. Trim, peel, and cut carrot into sticks (like fries; ours were 3 inches long and ⅓-inch thick). Peel and separate mandarin oranges into segments if desired (or simply pack whole in lunch bags to peel later!).

In a small bowl, whisk together garlic powder and 1 TBSP olive oil (2 TBSP for 6 servings). Place flatbreads on a clean work surface. Brush tops of flatbreads with as much garlic oil as you like. Evenly sprinkle one flatbread (two for 6) with cheddar. Top with remaining flatbread, oiled side down.

Melt 2 TBSP butter in a large, preferably nonstick, pan over medium heat. Add flatbread sandwich to hot pan and cook until flatbread is golden and cheese melts slightly, 2-3 minutes per side. (Work in batches for 6 servings, adding an additional 2 TBSP of butter to pan between batches.) Transfer to a cutting board. Cut flatbread grilled cheese into 9 even squares (18 squares for 6).

To serve: Divide grilled cheese squares, cucumber rounds, carrot sticks, mandarin segments, and chocolate chips between plates. Serve with marinara, ketchup, and or barbecue sauce on the side for dipping. To stash: Let grilled cheese squares cool completely. Refrigerate grilled cheese squares, cucumber rounds, carrot sticks, mandarin segments, chocolate chips, and dipping sauces in separate containers and pack as desired!
