TOAST: Adjust rack to top position and preheat oven to 425 degrees. Trim and discard ends from baguettes (or save for snacking!). Slice each baguette crosswise into 8 rounds. Spread out slices on a baking sheet and drizzle with olive oil. Toast on top rack of oven until golden brown, 5-10 minutes. TIP: Want to make day-of prep easier? You can toast the baguette slices the day before serving!

ASSEMBLE: Meanwhile, place ricotta in a small bowl; season generously with salt and pepper. Roughly chop walnuts. When you’re ready to serve, spread ricotta onto toasted baguette slices; top with preserves and walnuts. Serve with your favorite beverage for snacking while you prepare the rest of the meal.
