
Do you have one pan and 20 minutes? That’s all you need to get this cheesy, beefy meal on the table! You'll sizzle up a combination of green bell pepper, ground beef, and our rice and grain blend to form the base of this skillet. Top it off with melty cheddar, tangy sour cream, and satisfyingly crunchy tortilla chips for a quick meal that can't be beat.

Wash and dry produce. Halve, core, and thinly slice bell pepper into strips; halve strips crosswise. Gently crush tortilla chips in their bag into small pieces.

Heat a drizzle of oil in a large pan over medium-high heat. Add beef, bell pepper, Mexican Spice Blend, salt, and pepper. Cook, breaking up meat into pieces, until beef is browned and cooked through, 4-5 minutes. Carefully drain any excess fat from pan.
Massage grain blend in pouch to break up grains. Stir grain blend, ⅛ tsp sugar, and ¼ cup water (¼ tsp sugar and ⅓ cup water for 4 servings) into pan with beef mixture. Cook, stirring, until grains are warmed through and incorporated, 30-60 seconds. Taste and season with salt and pepper if desired.
Sprinkle cheese evenly over skillet. Remove from heat and cover with lid until cheese melts, 1-2 minutes.

Drizzle sour cream over skillet. Evently sprinkle tortilla chips over the top. Serve with hot sauce on the side.
This was good, but was a bit lacking in flavor. I put a little Tajin in it, which helped, but I couldn't help feeling like it needed something brighter in there, like lime or tomato. I loved how easy it was, but to make serving easier, I put the cheese on it in the pan, but put on the sauces and chips after dishing it up into bowls.
We really liked this, but a bit bland for our taste and I had to add much more Mexican spices of my own. Added onions. Portion size is fantastic. Made a burrito for lunch tomorrow. I would order again.
Mixing the sour cream and hot sauce (2:1) made a very nice sauce that added to the flavors!
