  • Wash and dry produce. Halve, core, and thinly slice bell pepper into strips; halve strips crosswise. Gently crush tortilla chips in their bag into small pieces. 

START SKILLET

  • Heat a drizzle of oil in a large pan over medium-high heat. Add beef, bell pepper, Mexican Spice Blend, salt, and pepper. Cook, breaking up meat into pieces, until beef is browned and cooked through, 4-5 minutes. Carefully drain any excess fat from pan. 

  • Massage grain blend in pouch to break up grains. Stir grain blend, ⅛ tsp sugar, and ¼ cup water (¼ tsp sugar and ⅓ cup water for 4 servings) into pan with beef mixture. Cook, stirring, until grains are warmed through and incorporated, 30-60 seconds. Taste and season with salt and pepper if desired.

  • Sprinkle cheese evenly over skillet. Remove from heat and cover with lid until cheese melts, 1-2 minutes. 

FINISH & SERVE

  • Drizzle sour cream over skillet. Evently sprinkle tortilla chips over the top. Serve with hot sauce on the side.
