Indulge in a decadent bowl of ramen topped with juicy sirloin steak and elevated with earthy truffle seasoning. Mushrooms, garlic, and scallions flavor a rich broth in which springy noodles and crisp bok choy and napa cabbage cook to perfection. Truffle butter adds more rich flavor, and a shower of nutty sesame seeds tops it all off!

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1

• Wash and dry produce. • Trim and thinly slice mushrooms (skip if your mushrooms are pre-sliced!). Peel and mince or grate garlic. Trim and thinly slice scallions, separating whites from greens.

Cook Steak
2

• Pat steak dry with paper towels; season generously all over with salt and pepper. • Heat a large drizzle of oil in a large pan over medium- high heat. Add steak and cook until browned and cooked to desired doneness, 3-6 minutes per side. • Turn off heat; transfer to a cutting board to rest for at least 5 minutes.

Cook Veggies
3

• Heat a drizzle of oil in a medium pot (large pot for 4 servings) over medium-high heat. Add mushrooms and cook, stirring occasionally, until beginning to soften, 2-3 minutes. • Stir in garlic and scallion whites. Cook, stirring frequently, until veggies are tender, 2-3 minutes.

Start Ramen
4

• Stir half the soy sauce (all for 4 servings) into pot with veggies. Cook, stirring, until liquid is mostly evaporated, 30 seconds. • Stir in 4 cups water (7 1⁄2 cups for 4), mushroom stock concentrates, and pork ramen stock concentrates. • Bring to a boil, then add noodles. Cook, stirring, until just tender, 1-2 minutes.

Finish Ramen
5

• Turn off heat. Add bok choy and napa cabbage and truffle butter. Stir until butter has melted and veggies are wilted, 30-60 seconds.

Finish & Serve
6

• Thinly slice steak against the grain. • Divide noodles and broth between bowls. Fan steak over top. Garnish with scallion greens and sesame seeds. Sprinkle with truffle seasoning to taste. Serve.

Beef is fully cooked when internal temperature reaches 145°.

  • Flavor: Many loved the rich, earthy truffle flavor, though some found it overpowering; others wished for more depth or spice 🍲.
  • Ease of prep: Several noted it was easy to make, with one mentioning lots of chopping required.
  • Suggestions: Consider adding spinach or broccoli for extra veggies; some preferred grilling the steak for added flavor.
  • Portions: Generous servings left some with leftovers for lunch; a few found there were too many noodles.
  • Noodles: Some felt the noodles became soggy quickly; try adding them gradually or serving separately to maintain texture.
  • Steak: Mixed reviews on tenderness; cook carefully to desired doneness and slice thinly against the grain.

My fiancé and I made this last night and it was soooo delicious! The truffle butter made it slightly creamy/rich and it worked well with the mushroom flavors. The cabbage/bok choy was a little wilted, but it still worked great in the broth. We ended up searing the steak and finished cooking in the oven. We probably should have cut it in half to cook in the pan, but it worked alright with the pan/oven method.

HF's soups and ramen are always terrific. I did the steak on the grill and the charcoal flavor was so good in this. I also had some leftover shallot that I quickled and added it as a garnish along with some sliced birdseye chilies. So good all around.

I don't normally refuse, but this was some of the best Ramen I've ever had. It's better than the restaurants around here absolutely will order again. Amazing comfort food just wanna curl up on the couch and eat this while watching a movie.

If it's possible to somehow provide the ingredients in the seasonings used in recipes in an easily accessible manner it would be so helpful. I loved this dish but there was something in it that extremely upset my stomach-I have IBS and have to avoid certain foods. We prepared this in a way to minimize inclusion of my trigger foods, so I can only assume the truffle seasoning contained one that I was unaware of.

It could use more veggies. We added more bok choy and broccoli. My husband added some hot sauce. It's still good.

Truffle ANYTHING is delicious, but the mushrooms, the noodles, the steak, all delicious! Probably one of my favorite HelloFresh meals so far!

So delicious! The truffle powdered seasoning wasn't necessarily needed but it did add a nice pop of flavor!

2 meals. I added 1 cup of water and a bit of salt for a bit more broth. Delish!

Wish I had used a little less truffle. Glad I only used package of mushrooms.
