  • Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce.

  • Cut potatoes into ½-inch-thick wedges. Trim and discard root end from lettuce; separate leaves. Set larger leaves aside; finely slice remaining leaves crosswise until you get about ½ cup shredded lettuce (1 cup for 4 servings)TIP: Save the larger leaves and any remaining lettuce for another use.

Roast Potatoes

  • Toss potatoes on a baking sheet with a large drizzle of oil, half the Fry Seasoning (you’ll use the rest later), salt, and pepper. Roast until browned and tender, 20-25 minutes.

Make Sauce

  • While potatoes roast, in a small bowl, combine mustard, mayonnaise, salt, and pepper.

Form Patties

  • In a medium bowl, combine beef* and remaining Fry Seasoning. Form into two patties (four patties for 4 servings), each slightly wider than a burger bun. Season all over with salt and pepper.

Cook Burgers

  • Heat a drizzle of oil in a large pan over medium-high heat. Add patties and cook to desired doneness, 3-5 minutes per side.

  • In the last 1-2 minutes of cooking, top each patty with gouda; cover pan to melt cheese.

  • Meanwhile, halve buns. Toast until golden brown.

Finish & Serve

  • Spread top buns with bacon jam. Fill buns with shredded lettuce, patties, and crispy fried onions.

  • Divide burgers and potato wedges between plates. Serve with Dijon mayo sauce on the side for dipping.
