
We firmly believe taco night should be treated like a holiday—one that should be celebrated at LEAST once a week, if not more. If you agree, you’ve got to add this Southwest version to your repertoire. Spiced ground pork and onion are piled into steamy tortillas with Monterey Jack cheese, a tangy cilantro lemon slaw, and sour cream. Taco ’bout a killer meal.

• Wash and dry produce. • Halve, peel, and finely dice onion. Finely chop cilantro. Quarter lemon.

• Heat a drizzle of oil in a large pan over medium-high heat. Add onion and a pinch of salt; cook, stirring occasionally, until slightly softened and lightly browned, 2-3 minutes. • Add pork* and Southwest Spice. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. TIP: If there’s excess grease in your pan, carefully pour it out.

• While pork cooks, in a large bowl, combine cabbage, mayonnaise, half the cilantro, juice from half the lemon (whole lemon for 4 servings), 1 tsp sugar (2 tsp for 4), and a pinch of salt and pepper.

• Stir Tex-Mex paste into pan with pork mixture until fully coated. Taste and season with salt and pepper. Remove pan from heat. • Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds. • Divide tortillas between plates and fill with pork filling, Monterey Jack, slaw, sour cream, and remaining cilantro. Serve with any remaining lemon wedges on the side.
These tacos are absolutely delicious. The smoky southwestern flavor of the ground pork paired with the sweetness of the Cilantro Lemon Slaw was amazing. Then adding the smooth creamy flavors of the Monterey Jack and Sour Cream made for a texture and taste combination. My mouth is still watering as I write about them.
The notes say easy cleanup and easy prep, but forgot to say easily delicious! The Santa Fe Tacos are true to their Hall of Fame status. The Tex-Mex sauce did not overpower the lemon slaw. A quick, perfect meal.
Fantastic and I love the one pan prep. The cilantro mayo slaw was outstanding! This was really delicious and I loved every bite. The pork and slaw combo was so filling and satisfying. Excellent flavors with thoughtful and not too many ingredients.
Taco nights has just changed in our home. This one-pan taco is so delicious. The flavor of the pork is outstanding, The slaw mix gives it a crunch like no other. A must try.
So easy to do- I absolutely LOVE the one pan meals. It makes my life much easier. This particular meal would not have necessarily been one I'd have picked, but it was great. The flavors complimented each other and the tangy-ness and crunch of the slaw with the savory pork... absolutely delicious. 10/10 would order again... in my next box if I could!

Not enough Monterey Jack cheese for 6 tacos, the seasoning and paste were delicious, also surprisingly sturdy tortillas. Slaw recipe was great and cabbage was fresh. Needs more spice

These Santa Fe Pork Tacos were really good! I loved the crunch of the red cabbage and all of the flavors too. Super easy to make, clean up was easy too.
