
If Dad’s a meat ’n’ potatoes guy, these grilled burgers are just the thing for a Father’s Day feast: juicy charred beef patties topped with melty cheddar tucked into pillowy potato buns slathered with secret sauce. And grilling isn’t just for meat—it adds smoky complexity to the potatoes, which you’ll top with a classic duo of sour cream and scallions.

Preheat a grill to medium heat. (If using a grill pan, you’ll heat it in Step 3.)
Wash and dry produce.
Halve potatoes lengthwise.

In a large microwave-safe bowl, toss potatoes with a pinch of salt. Cover tightly with plastic wrap; microwave until potatoes are fork tender, 5-8 minutes. (For 4 servings, you may need to microwave potatoes for an additional 2-3 minutes.)
Add a drizzle of oil and season with pepper; toss to combine.

While potatoes cook, finely chop half the pickle slices. (If using a grill pan, heat over medium-high heat while potatoes cook.) Trim and thinly slice scallions.
In a small bowl, combine mayonnaise, ketchup, and chopped pickle. Set aside.

Add microwaved potatoes to grill (or grill pan), cut sides down; grill, flipping occasionally, until lightly charred, 2-3 minutes. Wash and dry bowl.
Season potatoes with salt and pepper. Transfer to a plate.

Meanwhile, in bowl used for potatoes, combine beef*, garlic powder, salt (we used ½ tsp; 1 tsp for 4 servings), and pepper.
Form mixture into two patties (four patties for 4), each slightly wider than a burger bun. Brush patties all over with a drizzle of oil.
Add patties to grill (or grill pan); grill to desired doneness, 3-5 minutes per side (grills can vary).
In the last minute of grilling, top each patty with cheddar.

Meanwhile, halve buns; toast until golden.

Spread cut sides of buns with as much sauce as you like. Fill buns with patties.
Divide burgers and potatoes between plates. Top potatoes with sour cream and garnish with scallions. Serve with remaining pickle slices and any remaining sauce on the side.
My family loved this meal! It is one of our favorites so far. The potatoes needed a little extra seasoning for our liking but we added that and grilled them like the directions stated, soo yummy!! Also, loved the crunch of the pickles in the burger sauce!!
Superb! The potatoes were amazing with the sour cream and green onion and cooked in the microwave and then grilled on the grill!
Very good and easy to put together. I don't have a grill or a grill pan so I threw the potatoes in the oven and pan-fried the burgers. The burger sauce was okay. It could use a little spice. I put some onion and garlic powder in it but it still needed something. Also, I have a suggestion: instead of chopping up the pickles you can just add some dill pickle relish. It makes it easier for those that may have issues with their hands (arthritis etc.).
The burger was good. The potatoes were GREAT. We actually went to the store for supplies and made the exact same dinner the following night. No leftovers either evening. This was fantastic.
I've cooked burgers the same way for 12 years. While eating these burgers my 17 year old son said, "Dad, we may have to change the family recipe."
The potatoes in my recipe called for opening up the potato, but I got a bunch of little potatoes so it wasn't what I wanted because I wanted a twice baked potato look. The sauce was extremely mayonnaise. Did not have enough of vinegar to put on it, the onions didn't really fit, the meat was OK pretty fatty but I guess that's the point with the Father's Day burger. Overall, not one of my favorite. I made all the ingredients work for our meal this evening, but I did not follow written instructions as they did not fit our needs.
Was good and quick to make. Wish burgers had a few more toppings and the potatoes were big like advertised. Instead of 2 large potatoes, I got 10 tiny ones that were difficult to grill.

Perfect...added Bacon and used spicy sweet pickles instead of dill. Also added cheese and and bacon to potatoes...our very own potato skins. Husbands fav.
I am happy to report that I am getting better at cooking burgers--these were probably the best I've attempted so far. And the potatoes were interesting, sort of a different take on a side dish.
