Orzo Pasta

Diced Skinless Dark Meat Chicken
2 unit
Chicken Stock Concentrate
1 ounce
Mirepoix Paste
2 teaspoon (tsp)
Salt
1 teaspoon (tsp)
Cooking Oil
teaspoon (tsp)
Black Pepper
1 tablespoon (tbsp)
Butter
(Contains: Milk)

Place 1 TBSP butter (2 TBSP for 4 servings) in a small microwave-safe bowl; bring to room temperature. Wash and dry produce.
Halve, peel, and dice onion into ¼-inch pieces. Trim, peel, and quarter carrots lengthwise; cut crosswise into ¼-inch-thick pieces. Trim and quarter zucchini lengthwise; cut crosswise into ½-inch-thick pieces.

Open package of chicken* and drain off any excess liquid.
Heat a drizzle of oil in a medium pot (large pot for 4 servings) over medium-high heat. Add chicken and onion; season with salt (we used ½ tsp; 1 tsp for 4) and pepper. Cook, undisturbed, until chicken is browned on one side, about 2 minutes (it'll finish cooking in the next step).
Stir in carrots, zucchini, mirepoix paste, stock concentrates, and 2½ cups water (5 cups for 4). Cover and bring to a boil.

Once soup is boiling, stir in orzo. Reduce to a simmer. Cook, covered, stirring occasionally, until veggies are tender, orzo is al dente, and chicken is cooked through, 10-12 minutes more.
Taste and season with salt and pepper if desired.

While soup simmers, halve and toast ciabatta. Spread with softened butter (if butter is not yet softened, microwave for 5-10 seconds). Halve ciabatta on a diagonal.
Divide soup between bowls. Serve with ciabatta toast on the side.
Good chicken soup recipe. Very rustic and tasty. Next time we make it we'll use celery instead of zucchini, maybe add a little cabbage too, and a bit more water, simmer it longer to really mix the flavors together. One of our favorite HF soup recipes.
So easy. I love orzo. I added a little bit more chicken stock to this dish cause I like it more brothy
OMG this soup was OUTSTANDING!! Loved the quickness of making the dish along with the flavors. The soup was soooo goood ;) I would definitely order this again.
Easy to make and great flavor. 2 recommendations: 1. Add a squeeze of lemon at the end. 2. Add more liquid.
Delicious! I added some lemon juice at the end to bring all the flavors together.
This is really good, especially on those cool nights. And it makes a lot.
Needs fresh garlic and more herbs. Otherwise, very filling and tasty, as well healthy.
I hope I see this soup again it was very delicious and made big portions.
Soup was good but orzo absorbs all of broth and not a soup anymore for leftovers. Also chicken thighs were fatty and not very good.
Really really good! 10/10 would order this again and again. Very hearty, buttered bread was a nice touch. Great job
