How do you make everyone happy at dinnertime? A DIY grilled turkey and cheese sandwich bar! Keep it simple with melty mild cheddar, turkey, and mayo or get tangy with honey mustard, tomato, and lettuce on crusty sourdough. If you ordered extras, add sliced apple and Swiss to the mix. With crispy roasted potato wedges on the side, everyone at the table will say “cheese!”

Instructions

Start Prep

• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Cut potatoes into 1⁄2-inch-thick wedges.

Roast Potatoes

• Toss potatoes on a baking sheet with a large drizzle of oil, salt, and pepper. Roast on top rack until browned and tender, 20-25 minutes.

Finish Prep

• Meanwhile, thinly slice tomato into rounds; season with salt and pepper. Trim and discard root end from lettuce; cut into bite-size pieces.

Build Bar & Sandwiches

• Place mayonnaise and half the dressing in separate serving vessels. Present family style along with sourdough, turkey, cheddar, and tomato for everyone to build their own sandwiches. (You’ll cook the melts in the next step!)

Toast Sandwiches

• Heat a large drizzle of olive oil in a large pan over medium heat. Carefully add sandwiches (for 4 servings, work in batches; wipe out pan between batches and add more olive oil as needed). Cook, gently pressing with a spatula or heavy-bottomed pan, until cheese melts and bread is golden, 2-4 minutes per side, adding another drizzle of olive oil when flipping. TIP: Lower heat and cover with lid if sandwiches begin to brown too quickly.

• In a large bowl, toss lettuce with remaining dressing.

Serve

• Halve turkey melts on a diagonal; divide between plates. Serve with potato wedges and salad on the side. TIP: Fill your sandwich with some salad for added crunch!
