Cooking Steps

PREP
1

• Adjust rack to middle position and preheat oven to 350 degrees. • Coat an 8-by-8-inch baking dish with cooking spray. • Quarter baguettes lengthwise, then cut into 2-inch pieces.

ASSEMBLE BREAD PUDDING
2

• Thoroughly shake coconut milk in container before opening. In a large bowl, whisk together coconut milk, eggs*, ½ cup sugar, and a pinch of salt. Stir baguette pieces into coconut milk mixture. Let soak until liquid has mostly absorbed, 10 minutes. • While baguette soaks, roughly chop dark chocolate cocoa almonds and dried cherries. • Stir almonds, cherries, and ½ cup semi-sweet baking bits (you’ll use more in step 4) into bread mixture.

BAKE BREAD PUDDING
3

• Transfer bread mixture to prepared dish. Bake on middle rack until bread pudding is set and edges of bread are browned, 35-40 minutes.

MELT CHOCOLATE & SERVE
4

• Once bread pudding is finished, place 1⁄3 cup semisweet baking bits in a small microwave-safe bowl. (Be sure to measure the chocolate; we sent more. Save the remaining for another use—like snacking!) Microwave for 20 seconds, then stir. Repeat in 20-second intervals until fully melted and smooth. TIP: To avoid burning chocolate, don’t skip the intervals! • Drizzle bread pudding with melted chocolate. Serve warm or at room temperature.

Wash hands and surfaces after handling raw eggs. Consuming raw or undercooked eggs may increase your risk of foodborne illness.

Review summary

Updated on Dec 2025
  • Flavor: Rich and indulgent, with a delightful crunch from the almonds. Some found it a bit too chocolatey or bitter.
  • Ease of prep: Simple to make, though melting chocolate for drizzling can be tricky. Consider skipping the final drizzle.
  • Suggestions: Try adding vanilla extract to the coconut milk. Chopped dates and mashed bananas complement the cherries nicely.
  • Portions: Makes more servings than expected; consider halving the recipe for smaller households.
  • Kid-friendly: Some children may not enjoy the cherries; consider offering them as an optional topping.
