These potatoes aren’t just any ol’ roasted spuds—they’re softened and smashed so that when you roast them, the insides get just as crispy and delicious as the outside. Did we mention they’re tossed with truffle zest and sprinkled with savory Parmesan cheese? Mic drop. Nutrition values are representative of a 1/2 bundle serving.

Multicolor Potatoes

Truffle Zest
¾ ounce
Parmesan Cheese

Pepper

Adjust rack to top position and preheat oven to 425 degrees.
Place sealed bag of potatoes in microwave; microwave until potatoes are mostly cooked through, 8 minutes. Carefully remove from microwave (use a kitchen towel or oven mitt—the bag will be hot!) and open bag (watch out for steam).
Toss potatoes in bag with a drizzle of oil. Transfer potatoes to a lightly oiled baking sheet and spread out in an even layer. Use the bottom of a glass or a potato masher to smash potatoes until they are ½ inch thick. Top with another drizzle of oil and season with a big pinch of salt and pepper.
Roast on top rack until browned and crisp, 15-20 minutes. (TIP: Flip potatoes in the last 5 minutes of roasting so they get crispy on both sides.)
Remove sheet from the oven and carefully toss potatoes with truffle zest. Sprinkle with Parmesan and return to top rack until cheese melts, 2-3 minutes more.
Well cheese and potatoes are two of my favorite things, but when I cooked these the suggested time, they were soft and rubbery instead of crisp, so I put them back in for another 15 min or so at a higher temperature, which helped them get a bit crispy, but they were still rubbery, I'm assuming because of the microwave. I wish there had been alternative instructions, like boiling or baking instead of microwaving the potatoes.
