About 1 hour before you’re ready to cook, remove prime rib from packaging; place on a baking sheet (larger side down) and allow to come to room temperature.
Adjust rack to middle position and preheat oven to 275 degrees.
Tent prime rib loosely with foil. Roast on middle rack until cooked to desired doneness, about 1½ hours. Transfer to a cutting board to rest, covered, at least 30 minutes.
Meanwhile, in a medium bowl, combine mayonnaise and horseradish sauce. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
Once prime rib has rested, halve lengthwise, then slice against the grain into ½-inch-thick pieces. Serve with creamy horseradish sauce on the side.
Prime Rib is fully cooked when internal temperature reaches 145°.
Having only had prime rib at steakhouses, I wasn't sure this would live up to those expectations--but I was pleasantly surprised! It was a long wait to cook and rest, but the end result was tasty and juicy and perfectly rare! And I have lots of leftovers, since my kid doesn't eat fatty cuts of meat!
Great prime rib but it definitely will not feed 8 -10 people unless you cut the slices very thin and that's not how you eat prime rib. Wasn't a fan of the creamy horseradish sauce, had a funny taste. I would have preferred having raw horseradish. If you like it rare, the way it is suppose to be, then don't cook it for more than 1 hour.
Excellent prime rib especially being precooked made it easy for an elderly person like me. Not a fan of the horseradish sauce but that me and my guest, would have preferred a simple gravy complimenting the meat and not overpowering it.
This made a fabulous and fabulously easy holiday dinner. [I put together the prime rib with the au gratin pototoes, parkerhouse rolls, and the lemony asparagus. Amazing! I also was able to keep it rare by putting a probe in and bringing it only to a temp of 115F before removing it from the 275F oven. I was a bit nervous about this and was hoping it would not even get to the 'medium' stage, which would be too done for us. It worked our perfectly! Please, please, please bring this back for other holiday meal times in the future. I would definitely order this again. Easy AND delicious and very reasonably priced for prime rib (especially considering I didn't pay for bone-in).... Wow!!!
Oh my word!! We bought this doe our Christmas dinner and everyone raved about it. I would seriously buy these mote often! We made it without the horsey sauce, too, and it was great! Loved the peppery flavor
My husband is a Chef we cooked it to the temp of 115-120 in the middle & it was perfect.
Delicious and easy!! No way was this 9 servings though. It was just 6, so I'm glad we had a couple of people cancel plans with us before I figured that out.
I loved this as a main course! No fussing! Just reheat in oven for 1.5 hours! Doesn't get easier or more delicious for a holiday meal! I'll order it next year, too! Please offer again!
It was scary when the meat arrived labelled "fully cooked" but I followed the directions exactly and it came out very good. The only sadder note is that several of us thought the roast was over seasoned, tasted a little too salty.
Wonderful! Should come with a BIG warning that it takes 1.5+ hours (plus oven pre heating).
