
One of our favorite ways to eat our veggies? Giving them the tempura treatment! Coating them in the light, airy batter before frying yields addictively crispy, golden results you just can’t get any other way. Here, you’ll whip up tempura mushrooms, then pile them into rice bowls with tender roasted green beans. It’s all drizzled with our favorite dynamite sauce—a creamy, spicy, sweet, and savory (yes, all those things!) sauce that’s so good, you’ll find yourself swiping up every last drop.

• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Zest and quarter lime. Trim and halve mushrooms (quarter any large mushrooms). Trim green beans if necessary. • In a small bowl, combine mayonnaise, chili sauce, and a squeeze of lime juice to taste.

• In a small pot, combine rice, 1¼ cups water (2¼ cups for 4 servings), and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.

• While rice cooks, in a medium bowl, whisk together tempura mix, Fry Seasoning, 1⁄3 cup cold water, and ½ tsp salt (use 2⁄3 cup cold water and 1 tsp salt for 4 servings). TIP: If needed, add more water 1 TBSP at a time until the mixture reaches a pancake-batter-like consistency. • Stir mushrooms into batter until fully coated.

• Toss green beans on a baking sheet with a drizzle of oil, salt, and pepper. • Roast until browned and tender, 12-15 minutes.

• Meanwhile, heat a 1⁄3-inch layer of oil in a large pan over medium-high heat. Once oil is hot enough that a drop of batter sizzles when added to the pan, use tongs to add coated mushrooms in a single layer. (TIP: You may need to work in batches.) Cook until golden brown, 3-4 minutes on the first side and 1-2 minutes on the second side. • Using a slotted spoon, transfer to a paper- towel-lined plate. Season with salt.

• Fluff rice with a fork; stir in lime zest and 1 TBSP butter (2 TBSP for 4 servings). Season with salt and pepper. • Divide rice between bowls and top with mushrooms and green beans. Drizzle with dynamite sauce and serve with any remaining lime wedges on the side.
This one is awesome. We added some garlic powder to the green beans. Also added ginger to the rice, then lime juice along with zest. We fried a little zucchini to go with the mushrooms and it was incredible with that sauce! That sauce is EVERYTHING.
I LOVED this recipe! I chose it because I felt this was something out of my comfort zone for cooking at home. I was presently surprised with how easy it was to follow the directions. The flavor was great, especially the sauce! I made additional tempura chicken breast pieces for my boyfriend because he does not like mushroom. And those did also not disappoint! I HIGHLY recommend!!
OMG, I just love these tempura recipes! Not the healthiest food choice, but fresh tempura is so tasty it is worth building the rest of the day's meals to account for it. This one is topped with the killer dynamite sauce, that makes the whole dish just pop. I highly recommend this recipe.
Wow wow wow! This mushroom tempura was perfect. Succulent and juicy mushrooms coated in a crispy, fried tempura batter. Really didn't think it could be as good as it was but I did not miss the meat AT ALL. The glaze was the perfect finishing touch.
Wonderful flavor and would love to make this again. The tempura didn't turn out as crispy as we hoped, but the flavor was delicious, so it didn't matter. The roasted green beans were a nice touch.
Yummy!!!! The combination of the acid from the lime rice with the juicy mushrooms and spicy sweet mayo was phenomenal. Green beans were nice and crisp.
FYI: I did my mushrooms in the airfryer and WOW - so light and crispy! The dynamite sauce is perfect - just enough tang! I put some directly into my rice to give that a little more flavor!
The sauce that was included to drizzle on the rice? Phenomenal! The tempura batter included in the box is great & I would use it to fry just about anything! Only thing I would do differently next time is to season the mushrooms before dipping them in the batter for an extra kick of flavor
This was just ok. The rice was very bland and the green beans, while fresh were also plain. The mushrooms were a great idea but I had difficulty getting it right. I had done tempura fish from a previous order and it was great. Perhaps a fail on my end. The sauce was terrific, just not enough for the whole dish.
While this was very good, I think a different vegetable would have been better. The green beans were tasty, but something smaller like chopped and roasted zucchini would have mixed better. The length of the green beans just didn't mix as well with the compactness of rice and mushrooms.
