Cooking Steps

Prep
1
  • Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce.

  • Cut potatoes into ½-inch-thick wedges. Halve buns.

Roast Potatoes
2
  • Toss potatoes on a baking sheet with a large drizzle of oil, Fry Seasoning, salt, and pepper.

  • Roast on top rack until browned and tender, 20-25 minutes.

Make Chipotle Mayo
3
  • Meanwhile, in a small bowl, combine mayonnaise with chipotle powder to taste (start with a pinch, then taste and add more if desired). Season with salt and pepper.

Form Patties
4
  • In a medium bowl, combine beef* and half the onion powder (all for 4 servings).

  • Form into two patties (four patties for 4), each slightly wider than a burger bun. Season all over with salt and pepper.

  • Heat a drizzle of oil in a large pan over medium-high heat. Add patties and cook until browned and cooked to desired doneness, 3-5 minutes per side.

  • In the last 1-2 minutes of cooking, top each patty with cheddar; cover pan to melt cheese.

Cook Patties & Toast Buns
5
  • Heat a drizzle of oil in a large pan over medium-high heat. Add patties and cook until browned and cooked to desired doneness, 3-5 minutes per side.

  • In the last 1-2 minutes of cooking, top each patty with cheddar; cover pan to melt cheese.

  • Meanwhile, toast buns until golden.

Finish & Serve
6
  • Spread bottom buns with as much BBQ sauce as you like. Spread top buns with chipotle mayo. Fill with patties and crispy fried onions.

  • Divide burgers and potato wedges between plates. Serve with any remaining BBQ sauce on the side.
