
We consider pasta night a holiday—one that we like to celebrate at least once a week, if not more. If you agree, you’re in luck. This dish has it all: al dente rigatoni, sautéed bell pepper, and flavorful chicken sausage, all tossed in a mouthwatering, creamy pink sauce. Of course, the festivities wouldn’t be complete without a generous sprinkle of Parmesan. Now, let the carb celebrations commence!

• Bring a medium pot of salted water to a boil. Wash and dry produce. • Core, deseed, and dice bell pepper. Trim and thinly slice scallions, separating whites from greens.

• Heat a drizzle of olive oil in a large pan over medium-high heat. Add bell pepper and cook until lightly browned and slightly softened, 3-4 minutes. • Add sausage* and scallion whites; cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. Season with salt and pepper.

• Once water is boiling, add rigatoni to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. • Reserve ½ cup pasta cooking water, then drain.

• While pasta cooks, stir Italian Seasoning, tomato paste, and 1 tsp sugar (2 tsp for 4 servings) into pan with sausage mixture until coated. • Pour in ¼ cup plain water (1⁄3 cup for 4). Bring to a simmer and cook for 1 minute, then reduce heat to low.

• Add cream sauce base to pan with sauce. Stir in 1 TBSP butter (2 TBSP for 4 servings) until melted. Season with salt and pepper.

• Add drained rigatoni to pan with sauce; toss to coat. If needed, stir in reserved pasta cooking water a splash at a time until pasta is coated in a creamy sauce. • Divide pasta between bowls and top with Parmesan. Garnish with scallion greens and serve.
This was so simple and very tasty. We like more spice so I added red pepper flakes to the pasta water when cooking the rigatoni. I love Hello Fresh's chicken sausage....always yummy. We would order this again.
Loved the creamy pink sauce, and even though the base of the sausage was chicken, it had enough spices to taste different and not dry like chicken can be. Loved the large rigatoni shells, hadn't had that in awhile:-)
This dish was our first with Hello Fresh and it is delicious. The chicken sausage was tasty and the rigatoni was perfect al dente style. Fun to make and satisfying to eat. Enjoy it with a glass of red and maybe some garlic bread. ;)
This was a super easy dish, but still far better than any normal pasta we would've made on our own. The chicken sausage was so good mixed with the pink sauce.
The amount of Italian seasoning in this PLUS the seasoning in the chicken sausage made this a bit overpowering. We normally love HF rigatoni dishes but this one was too much.
The chicken sausage rigatoni tasted great and was easy to make. My kids said this meal is one we should do again.
I usually don't like sausage so the fact that this has made a sausage fan of me is amazing. I also love the big rigatoni noodles. They're so delicious and the texture is so good
The chicken sausage rigatoni was very good. Great flavor. The only problem, the cooking time for the rigatoni pasta needs to be longer. Way too firm for our liking. I will adjust the time next time.
It tasted wonderful but even after 13 minutes of cooking time the rigatoni was still a little too al dente for us. But now we know for next time.
Very tasty, could use a bit more chicken sausage. Rigatoni was a good pasta to use. Love the tomato cream sauce.
