
Whether there’s a game on or not, we’re always on Team Melty Hot Subs. These sandwiches are made super easy with Italian chicken sausage, which already comes flecked with spices and packed with flavor. It’s cooked with bell peppers in a garlicky tomato sauce that gets a tangy boost from balsamic vinegar. Pile the filling into cute and crusty demi baguettes, then let a blanket of mozz melt over the subs. While they’re in the oven, prepare a quick salad to round out the meal. Just make sure your hands are sauce-free to receive all the high-fives for a winning dish.

• Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. • Halve, core, and thinly slice bell pepper into strips. • Place 2 TBSP butter (4 TBSP for 4 servings) in a small microwave-safe bowl; microwave until just softened, 10-15 seconds. Stir in ¼ tsp garlic powder (½ tsp for 4) and a pinch of salt. (Be sure to measure the garlic powder; you’ll use the rest in the next step.)

• Heat a large drizzle of oil in a large pan over medium-high heat. Add sausage* and bell pepper; cook, breaking up meat into pieces, until sausage is browned and cooked through, 4-6 minutes. • Stir in tomato paste, half the vinegar (you’ll use the rest later), ½ cup water (1 cup water for 4 servings), and remaining garlic powder. Cook, stirring, until sauce is bubbling, 1-2 minutes. Taste and season with salt and pepper.

• Halve baguettes lengthwise, stopping before you get all the way through. Spread cut sides with garlic butter. Place cut sides up on a baking sheet. (TIP: Line sheet with foil first for easier cleanup.) Toast on middle rack until bread is golden, 3-4 minutes. • Carefully spoon sausage and pepper mixture onto bottom halves; top with mozzarella. Return to middle rack until cheese melts, 2-3 minutes more.

• In a large bowl, toss mixed greens with remaining vinegar and a large drizzle of olive oil. Season with salt and pepper. • Divide salad and sandwiches between plates and serve.
The subs were outstanding. And I love salads. However, a bag of greens topped with oil and vinegar doesn't make a tasty salad for me. Any chance of putting in a few things to add to the salad?
Very good. I love anything with this chicken sausage in it. I wish the rolls were larger but it was just as good on bread I already had. This was able to feed 3 adults, 1 teen, and there was some leftover meat that was seconds for someone. Great portions. Thank you.
Loved the spring mix and buns. The chicken sausage was pretty good, but not as good as a meatball sub or maybe even regular pork italian sausage. But a good change. Great portion sizes for four people.
I loved this!!! The crisp bread and the flavor of the chicken was AMAZING!!! I did find out that I am not a fan of balsamic.
I'm really a fan of the Hello Fresh chicken sausage. So far every dish that used it as the protein has been a winner! This sandwich was great!
Chicken sausage is a delicious and lighter alternative to pork Italian sausage. The taste isn't much different.
Was a little hard to keep baguette together so we ended up with more of an open face sandwich. Husband doesn't like wilted lettuce which is basically what the greens ended up being with vinegar and oil. Also, we only got spinach, was not the mixed greens as advertised.

Delicious but again spicy and doesn't describe it as spicy. I believe their Italian Chicken sausage has too many spices in it, seems the meals I made with that chicken sausage is always too spicy
Sandwich was great! Salad was awful! Lettuce with oil and vinegar IS NOT A SALAD! An easy add, Candied Pecans, and dried Cranberries. And a real balsamic dressing.
