Wash and dry produce. Arrange rack in middle position and preheat oven to 425 degrees.
Thinly slice zucchini into ½-inch-thick rounds; toss on a baking sheet with a large drizzle of oil, salt, and pepper. Roast until browned and tender, 15-18 minutes.
