
Wrap luscious salty prosciutto and our Italian cheese blend in soft tortillas with fresh, peppery arugula coated in a sweet-tangy honey-mustard dressing for a truly delicious lunch idea. • Wash and dry produce.
• In a medium bowl, toss together arugula and dressing.
• Lay tortillas on a clean work surface. (TIP: For softer tortillas, wrap in damp paper towels and microwave for 30-45 seconds.) Divide prosciutto, cheese, and as much dressed arugula as you like between tortillas.
• Starting from the bottom of each tortilla, tightly roll into tubes; trim and discard curved edges. Slice each roll-up crosswise into 6-8 pieces.
• Let a bit of air out of bag with crispy fried onions; lightly crush.
• Divide roll-ups between plates, placing cut sides down. (TIP: Press roll-ups against each other to prevent unrolling.) Pile any remaining arugula on the side. Garnish roll-ups and arugula with crispy fried onions and serve.
First, this is very easy to put together but, pretty messy to eat. Second, I'm not sure what honey mustard has to do with Italian flavors. Maybe a balsamic vinaigrette or even an Italian dressing would make more sense. A cheese with more flavor than mozzarella would also be good. Sliced cheese would make this less messy since the shreds want to fall out of the rolls. I'm guessing the onions are more about texture than flavor. The saltiness from the onions overpowered some of the more delicate flavors.
This was a quick and tasty lunch, but really needed more prosciutto--2 slices per wrap just isn't enough. Would probably order again but would buy some prosciutto at the store to supplement.
It could have used a bit more honey mustard dressing, but very good otherwise. Kept well for leftovers. The shells were ripped/cut prior to removing them from the wrapper and it made it difficult to roll....toothpicks helped hold it together!!
I loved the crunch of the fried onions but wish it had more prosciutto.
