This hearty, vibrant lunch idea is packed with delicious veggie—baby lettuce, red cabbage, and carrots form a crisp base for supremely satisfying salad. You’ll add protein-packed edamame, juicy mandarin orange segments, nutty sesame seeds, and fresh scallion greens for color, texture, and crunch. It’s all tossed with a slightly sweet and very savory peanut-sesame dressing that’s frankly the star of the show. Summer glow, here we come!

Scallions
• Wash and dry produce.
• Place edamame in a small microwave-safe bowl and microwave until warm and slightly tender, 30-60 seconds.
• Trim and discard root end from lettuce; chop leaves into bite-size pieces. Thinly slice scallions, separating whites from greens. Peel and separate mandarin into segments; halve each segment crosswise.
• In a large bowl, whisk together peanut butter, sesame dressing, and as many chili flakes as you like. (TIP: Knead peanut butter packet before opening to make whisking easier.) Add water 1 tsp at a time until dressing reaches a drizzling consistency.
• Add lettuce, cabbage, carrots, scallion whites, and three-quarters of the mandarin pieces; toss to coat. Taste and season with salt and pepper.
• Divide salad between bowls. Top with edamame, sesame seeds, scallion greens, and remaining mandarin pieces. Serve.
This salad is exceptional! The sesame peanut dressing is amazing! I also love all of the vibrant colors and varied textures. I will definitely order this again!

This one really was great for a quick lunch. I added some slivered almonds and chow mein noodles I had in my pantry, for a little extra crunch. The dressing was fantastic!

This salad is just missing something. The dressing is great, but it's all you taste. The sesame seeds are just lost and don't add much; perhaps a larger nut or seed would be an improvement. The main issue, however, is that 4-5 tiny orange segments are completely lost in this big salad. It really needs 2-3 times the amount of citrus fruit to add some flavor contrast--a sweet counterpoint to the spicy dressing. One tiny mandarin orange for two huge portions is nowhere near enough!
I loved this salad recipe, and will definitely order this one again. My only disappointment was that one mandarin was not enough for my husband and I. We both agree that at least two, maybe three, mandarins would have been perfect in this salad.
I enjoyed this salad but would have liked another mandarin. The mandarin flavor was lost in the midst of the other ingredients. It was still a good salad.
Needed more mandarin orange (one small mandarin for all that lettuce was hardly noticeable). I have had better salads in this vein of flavor (I would have liked cilantro and more crunchy texture on top, e.g., nuts would have been nice). A lot of salad, we had leftovers eating dinner portions for 3 off the 2-person meal. If we get it again we will try to remember to reserve/wait on adding the romaine to the salad until just before serving-the leftovers could have saved well if only the cabbage/other components were dressed. It was not good leftover the next day due to the romaine wilting.
