Carefully discard all but 1 tsp bacon fat (2 tsp for 4 servings) from pan. (You’ll use this to cook the onion later.) • While bacon cooks, cut sweet potatoes into ½-inch-thick wedges. Halve, peel, and thinly slice onion.

• Toss sweet potatoes on a baking sheet with a drizzle of oil, salt, and pepper. Roast on top rack until golden brown, 20-25 minutes.

Caramelize Onion

• Meanwhile, add a drizzle of oil to pan with reserved bacon fat; heat over medium-high heat. Add onion; cook, stirring occasionally, until browned and softened, 8-10 minutes. Add half the jam (you’ll use the rest later), ¼ cup water (½ cup for 4 servings), and 1 tsp sugar (2 tsp for 4); cook, stirring occasionally, until onion is caramelized and jammy, 2-3 minutes more. Season with salt and pepper. • Turn off heat; transfer to a plate. Wash out pan.

Assemble Sandwiches

• Top half the sourdough slices with even layers of Monterey Jack and caramelized onion; drizzle with remaining jam. Arrange bacon and gouda on top (TIP: If gouda slices don’t fit, cut them in half and shingle on sandwiches). Close sandwiches with remaining sourdough slices.

Make Melts

• Melt 1 TBSP butter in pan used for onion over medium heat. Add sandwiches and cook, pushing them around pan to absorb butter, until bread is golden brown on one side and cheese begins to melt, 4-6 minutes. Add another 1 TBSP butter to pan and flip; cook until bread is golden brown on second side and cheese melts. (For 4 servings, work in batches or use a second pan, adding 1 TBSP butter for each side.)

Finish & Serve

• Halve melts on a diagonal. • Divide melts between plates and serve with sweet potato wedges on the side.

Bacon is fully cooked when internal temperature reaches 145°.

The bacon, gouda, onion, & fig combo was magical. I did bail on the wedges though. Cut potatoes in 1/4 inch medallions. Tossed them in oil, bacon salt, & Cavender's Greek Seasoning. Threw them in the air fryer @ 350° for 8 min both sides.

Love these sandwiches. So easy and tasty. The Gouda French onion flavor is more to our liking but the flavors here are great. A bit rich for me. My husband was over the moon with the bacon berry mix.

The melts were amazing. The fries were okay, but the highlight of the meal were the melts. The sweetness of the jam, saltiness of the bacon and nuttiness of the gouda worked so well together.

Loved the combination of the jam & gouda cheese!! However, instructions said to cook the bacon until crispy. The bacon was so thick it never got crispy in the pan & remained more like a mini fried ham steak instead (chewy). Bacon needs to be cut thinner so it can get crispy.

Hmm figgy onion jam pairs marvelous with crisp bacon and melted cheese. Russet potatoes would be better when meal calls for roasted wedges.

This was a super tasty grilled cheese! I really loved the jam with the caramelized onions. The sweet potato wedges were also very good but I think they would have been better if they could have gotten crispy in the oven, they came out pretty soggy.

The sandwiches were delightful. Very creative. I've now made caramelized onions in a variety of kits, but this recipe bested the others without contest. The potatoes. I mean, potatoes are good and reliable, but paired with the sandwich they were just Plain Jane. Maybe a nicely themed aioli/dipping sauce to dress them up? Heinz just didn't feel right today. Additionally, I often don't feel quite satiated with the meal portions, but this one was quite satisfying. On a side note: the quality of the bacon was terrific!
