
Our iconic firecracker sauce—creamy, spicy, sweet, and savory—elevates tender turkey meatloaves to delicious new heights. The loaves are glazed with an umami-rich soy-ginger sauce and roasted alongside broccoli and zucchini. A final drizzle of firecracker sauce completes the meal.

• Adjust rack to middle position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry produce. • Cut broccoli into bite-size pieces if necessary. Trim and halve zucchini lengthwise; lay flat and cut on a diagonal into 1⁄2-inch pieces. • Toss broccoli and zucchini on one side of a baking sheet with a large drizzle of oil, salt, and pepper. (For 4, spread veggies out across entire sheet.) TIP: For easier cleanup, line baking sheet with foil before adding veggies.

• In a medium bowl, gently combine turkey*, garlic powder, panko, stock concentrate, half the stir-fry sauce, 1 TBSP water (2 TBSP for 4 servings), salt, and pepper. • Form into two 1-inch-tall loaves (four loaves for 4).

• Place meatloaves on opposite side of baking sheet from veggies; brush tops of meatloaves with remaining stir- fry sauce. (For 4 servings, place meatloaves on a second baking sheet.) • Roast on middle rack until meatloaves are cooked through and veggies are browned and tender, 22-25 minutes. (For 4, roast veggies on top rack and meatloaves on middle rack, swapping rack positions halfway through.)

• While meatloaves and veggies roast, in a small bowl, combine mayonnaise, chili sauce, ponzu, 1 tsp water (2 tsp for 4 servings), salt, and pepper. • Divide meatloaves and veggies between plates; drizzle meatloaves with as much firecracker sauce as you like. Serve with any remaining firecracker sauce on the side.
Ground Poultry is fully cooked when internal temperature reaches 165°.
This is the moistest meatloaf I've had from Hello Fresh! That stir fry sauce on top adds such good flavor! The firecracker sauce makes the roasted zucchini and broccoli a great side with the meatloaf. Looking forward to seeing this recipe again!
Delicious! The meatloaf flavor was really good! Nice amount of veggies and the thicker slices of zucchini were perfect, not mushy! The firecracker sauce- yummy!
Better than a beef or pork meatloaf, per my son. I've never attempted one because I just didn't think I could pull it off. You did. The only thing I did differently was eliminated the stirfry sauce on the turkey meatloaf. I felt it would make it too sweet. I was told it was a good call - and can always be added as desired after being completed.
I love that I could cook this all on one pan. I was surprised by the flavor of the turkey - not bland at all. The zucchini does get softer than I like roasting as long as the broccoli
I don't usually make meatloaf, so I thought I'd try this for something different. I liked it a lot! Roasting vegies is common in your recipes and that's fine. I like to steam my broccoli, though.
My only concern is the ground turkey. It is more like pureed turkey than ground turkey. As a consequence, the consistency of the meatloaves is a bit odd. The taste is fine, but I prefer ground turkey that has a less pureed consistency.
The stir-fry sauce was salty so I would have done less on top, but otherwise it was good. Would have also added hot sauce to the sauce since the "firecracker" name made it seem like it could be spicy and it wasn't
Fun alternative to the firecracker meatballs! Same great flavor in a different package!
Really like the change of a turkey meatloaf and my husband especially liked the sauce.
