
If anything you’re like us, you love a bruschetta appetizer and you also love scallion cream cheese on your morning bagel (we totally have that in common, right?). Our chefs—always innovating—combined these two faves for a genius lunch idea: toasty bread shmeared with scallion-studded cream cheese, layered with juicy Tuscan-spiced chicken, and finished with a tangy, juicy tomato, scallion, and balsamic topping. It’s time to hop aboard the 10-minute express train to Great Lunch City!

Sourdough Bread

Fully Cooked Chicken Breasts

Tuscan Heat Spice
5 teaspoon
Balsamic Vinegar
4 tablespoon

• Toast sourdough until golden.
• Wash and dry produce.
• Dice tomato into ½-inch pieces. Thinly slice scallions, separating whites from greens.
• Pat chicken dry with paper towels. Thinly slice crosswise at an angle into strips; place in a large microwave-safe bowl. Stir in a drizzle of olive oil, half the Tuscan Heat Spice, salt, and pepper. Cover with plastic wrap and microwave until chicken is warmed through, 90 seconds.
• In a small bowl, combine tomato, scallion whites, vinegar, remaining Tuscan Heat Spice, a drizzle of olive oil, salt, and pepper.
• In a second small bowl, combine cream cheese and half the scallion greens. TIP: Microwave cream cheese for 15 seconds to soften before combining with scallions.
• Place toasted sourdough on a clean work surface; spread scallion cream cheese over each slice. Top with chicken and tomato topping. Garnish with remaining scallion greens.
• Divide chicken sandos between plates and serve.
Taste great. Quick and easy to follow recipe. All the ingredients were fresh and lasted this time and there was enough seasoning!
Older folks like us tend not to do so well with open-faced sandwiches as they can be pretty messy. So we took the ingredients and prepared them mostly as directed, but instead assembled them into actual sandwiches. Scallion cream cheese on all slices of sourdough, sprinkled with more scallions on one slice, warmed & spiced chicken on top of that, then sliced tomatoes, salt, pepper, and Tuscan seasoning, a little drizzle of the balsamic vinegar, other slice of sourdough on top. Cut in halves. We also made some air-fried french fries for a side. Anyway, still delicious.
The tomatoes really add freshness. The chicken breast were so good and cooked well. I love the addition of balsamic vinegar, one of my favorite sauces. The bread makes me want to use the type of bread more. Delicious 10/10
My experience of the 10-minute lunches are that they're good, but not great. This one, however, was great--the balsamic bruschetta was delicious and overall it was a really delicious meal!
This was delicious and light but I recommend pan frying the chicken rather than microwaving
Easy to prepare and tasted good - let the tomatoes soak in the balsamic vinegar for a while and they are very tasty.

Outstanding flavors! Needs a doubling of the cream cheese though as it was not enough to cover 4 slices of bread.
Just a little more chicken, and more than one tomato would have made it 4/4. Barely enough ingredients for 2 pieces of toast.
Was a little too much on the acid/spice side. Added a little sugar to the balsamic to balance it out. Would maybe be better if use a balsamic glaze instead.
