Bring a medium pot of salted water to a boil. Wash and dry produce.
Trim and halve cucumber lengthwise, then thinly slice into ¼-inch-thick half-moons; place in a medium bowl. Add sesame seeds and a small pinch of salt; toss to combine. Set aside until ready to serve.
Thinly slice scallions, separating whites from greens. Peel and thinly slice garlic.

Rinse shrimp* under cold water; pat very dry with paper towels. Season with salt and pepper.
Heat a large drizzle of olive oil in a large, preferably nonstick, pan over medium-high heat. Add shrimp; cook, stirring occasionally, until opaque and cooked through, 4-6 minutes.
Turn off heat; transfer shrimp to a plate. Wipe out pan.

In a large bowl, whisk together eggs, gochujang aioli, miso sauce concentrates, and half the chili flakes.
Using the medium holes of a box grater or a microplane, grate Parmesan into bowl with carbonara sauce. Whisk to combine.


Heat pan used for shrimp over medium-low heat. Add scallion whites and garlic. Cook, stirring, until fragrant, 15-30 seconds.
Add drained noodles to pan; stir to combine.
