A balanced kids’ lunch in 15 minutes, with no cooking required, no pans to clean? That may sound like a dream, but we’re bringing it to life! You’ll roll up sliced turkey and sweet-tangy honey mustard dressing in flour tortillas, and serve with crisp carrot and cucumber sticks, hummus for dipping, and sweet apple slices. The kicker? You’ll spend less time shopping, planning, and cooking for your family, and more time hanging out with them! This recipe is designed to provide lunch for multiple days. For each lunch, 3 servings and 6 servings are provided for a 2 person and 4 person box, respectively.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1

• Wash and dry produce. • Trim, peel, and cut carrot into sticks (like fries; ours were 3 inches long and 1⁄3 inch thick). • Halve, core, and thinly slice apple. • Trim and halve cucumber lengthwise; lay flat and cut into ½-inch-thick sticks.

Assemble Roll-Ups
2

• Wrap tortillas in damp paper towels; microwave until warm and pliable, 30 seconds. Lay tortillas on a clean work surface. • Evenly spread dressing on tortillas. Arrange 1-2 turkey slices in a single layer on each tortilla. (TIP: We sent more turkey! Use as many or as few slices as you like.) Top with cucumber sticks. • Roll up tortillas, starting with filled sides, to create rollups. Halve roll-ups.

Serve or Stash Lunch
3

• To serve: Serve turkey roll-ups with carrot sticks, apple slices, and hummus on the side. • To stash: Refrigerate turkey roll-ups, carrot sticks, apple slices, and hummus in separate containers and pack as desired.

A perfect base for customization! I made one set of rolls with the provided honey mustard, one with ranch, and one with a splash of hot sauce, so each lunch feels a little different and new. Next time I get this, I might sneak in some greens as well, baby spinach or arugula.

So easy to assemble and perfect for lunch. I made these, threw a bag of veggie chips and a granola bar in with it, and lunch for my high school kiddos was finished for the week. Thank you!

Wish the sauce came in separate packets so they can put it together at school and it won't go soggy. Also, TON of hummus for just 1 carrot. Maybe include an extra carrot and cucumber next time for snack?

Felt like it was missing something. I ended up having to add a lot to make it a suitable lunch like better sides.

Decent, the gala apple was bland with hardly any flavor.

Though we got everything the carrot was super soggy, to the point I would not even give it to my dogs. Good quality turkey though!
