Make Quesadillas

  • Heat a drizzle of oil in a large pan over medium-high heat. Add ground beef to pan; season with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes.

  • Place tortillas on a clean work surface. Fill one half of each tortilla with cooked beef, as much refried beans as you like (if desired, microwave any remaining beans and serve on the side), and pepper jack. Fold tortillas in half and gently press down to create quesadillas.

  • Heat a drizzle of oil in same pan over medium heat. Add quesadillas and cover pan with lid; cook, undisturbed, until browned and crispy, 3-5 minutes.

  • Flip quesadillas; cook, uncovered, until browned and crispy, 3-5 minutes more. TIP: If quesadillas are browning too quickly, lower heat!

  • While quesadillas cook, wash and dry produce.

  • Quarter lime.

  • In a medium bowl, toss cabbage and carrot mix with ranch dressing, juice from half the lime, salt, and pepper until evenly coated. Set aside until ready to serve, stirring occasionally.

  • Gently massage rice in package to separate grains. Partially open package to vent. Microwave for 1½ minutes (for 4 servings, microwave both packages of rice together for 2-3 minutes). TIP: Microwave times may vary. Be careful when handling and opening the package!

  • Remove from microwave and let rest for 30 seconds.

  • Cut quesadillas into pieces.

  • Divide quesadillas, slaw, and rice between plates. Serve with guacamole, salsa, sour cream, hot sauce, and remaining lime wedges on the side.
