  • Adjust oven rack to top position and set broiler to high. Wash and dry produce.
  • Drain corn. Trim and thinly slice scallions, separating whites from greens. Quarter lime.
Cook Pork & Corn

  • Drain and roughly chop pulled pork into smaller pieces.
  • Heat a drizzle of oil in a large pan over medium-high heat. Add pork, corn, and scallion whites; cook, stirring occasionally, until pork is heated through and corn is starting to brown in spots, 3-5 minutes.
  • Stir in Tex-Mex paste and ⅓ cup water (½ cup for 4 servings). Cook, stirring, until sauce has thickened and pork and corn are coated, 1-2 minutes more.

  • Meanwhile, in a medium bowl, combine mayonnaise, chipotle puree, juice from half the lime, ½ tsp sugar (1 tsp for 4 servings), salt, and pepper.
  • Add coleslaw mix; toss to combine.
Finish & Serve

  • Arrange tortilla chips in an even layer on a baking sheet. (TIP: For easier cleanup, line sheet with foil first.) Top with pulled pork mixture and Mexican cheese blend. Broil on top rack until cheese melts, 2-3 minutes.
  • Top nachos with chipotle slaw, guacamole, scallion greens, and as much hot sauce as you like. Serve family style directly from baking sheet, with remaining lime wedges on the side.
