Preheat oven to 350 degrees. Drain and rinse corn, then pat dry with paper towels.
Heat a large drizzle of oil in a large, preferably ovenproof, pan over medium-high heat. Add corn; cook, stirring occasionally, until corn is charred, 4-6 minutes (if corn begins to pop, cover pan). Season with salt and pepper.
Turn off heat; transfer to a large bowl. Stir in cream cheese, sour cream, two packets Mexican Cheese Blend, and a pinch of salt and pepper. Return mixture to pan or place in a baking dish; top with remaining Mexican Cheese Blend.
Bake until bubbly, 12-15 minutes. Serve with blue corn chips on the side for dipping.
Recipe Suggestion: Have some cilantro on hand? Roughly chop some and sprinkle on top.
The only thing included with the corn was dairy. No seasonings, herbs, spices, sauces. You could call it Cheesy Corn Dip, but there was nothing remotely Mexican about it. Tasted fine, but even after adding a can of green chilies, it was still too bland.
To make this a really nice Mexican street corn add a little spicy seasoning. Highly recommend Tajin
This was such a great side dish. We loved the toasted corn and the creaminess of the dish. We were missing an ingredient *cotija cheese*. It didn't matter, we finished it!
A quick and easy snack, very cheesy and a yummy dip, just wish there was more corn personally! The chips were a great touch with the quinoa, sesame seed, and other things that made it tasty!
This had so much potential but fell short! While it was good, it definitely needed some type of southwest seasoning or something to give it a Mexican street style flavor. As is, it was just corn, cream & cheese. Nothing special, no need to order again without some sort of seasoning added to the recipe.
I only used 4 ounces of cream cheese and two of the shredded cheese packets instead of all three. The dish was plenty cheesy. It would have been too much if I had added all as instructed. Or, I could have used all but added a second can of corn. The blue corn tortilla chips made this dish perfect!
We LOVE street corn, so this dip was super yummy and easy to make to go with our dinner!
