Vanilla Cupcake Kit with Strawberry Frosting
(Contains: Eggs, Milk, Wheat)
Preheat oven to 350 degrees. Bring ½ cup unsalted butter to room temperature.
In a medium bowl, whisk together oil and sugar until combined. Whisk in vanilla and 1 egg until smooth. Wash and dry whisk.
In a second medium bowl, whisk together flour, baking powder, and salt. Slowly add flour mixture and ⅔ cup milk to the oil mixture, alternating dry ingredients and milk; stir until just combined.
Arrange the cupcake cups on the baking sheet. Divide batter evenly among cupcake cups, filling each just over half full. Bake until a toothpick inserted into the center of a cupcake comes out clean, 18-22 minutes. Let cool to room temperature.
Meanwhile, in a third medium bowl, beat softened butter with a hand mixer until pale, then slowly add confectioners’ sugar and food coloring. Beat for 2-3 minutes. Stir in strawberry jam and 1 tablespoon milk or water until smooth and creamy.
Fold the top of the piping bag over your hand to form a cuff; add frosting. Unfold bag and twist to close. Snip about 1 inch off the tip of the bag; push frosting down to the tip of the bag. Evenly pipe frosting onto cupcakes.
These were spectacular. Some advice: 1. It's not immediately clear what you're supposed to do with the milk. But in mixing the wet and dry ingredients, you add the milk in then too. I think it would have been easier to just add it in with the egg. But what do I know? 2. Do let the cupcakes cool before you frost them or you'll have a real mess. I did two right away just to taste and test and I will definitely be letting the rest of them cool first.
These are very good. Didn't even take too long. Don't even need a muffin pan or mixer. I would suggest an electric mixer to make the frosting however. I like that the red dye was actually a beet powder not a synthetic dye.
Ok yall, the directions state to USE AN electric mixer, but I whipped the butter by hand, worked just fine. A little dry, but the frosting was excellent.
Fun to make. A bit sweet. The 'food coloring' didn't do much. The strawberry jam was the best part. Overall good.
It was hard for me to get the frosting on neatly. Mine looked messy. However, I liked the strawberry flavor and the pretty pink striped cups and the pink frosting.
