
When it comes to comfort food, meatloaf used to sit squarely in the number one spot, followed closely by the next-day meatloaf sandwich. But this sandwich changes everything. Topped with a classic ketchup glaze, sliced meatloaf is stuffed between toasted sourdough along with caramelized onion and a horseradish Dijonnaise. With potato wedges on the side and more sauce for dipping, prepare to rave about the triumph of this long-time fave!

Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry produce.
Cut potatoes into ½-inch-thick wedges. Halve, peel, and thinly slice onion. Mince a few slices until you have 2 TBSP (4 TBSP for 4 servings).
Trim green beans if necessary. (Save potatoes for another use.)

Toss potatoes on a baking sheet with a drizzle of oil, salt, and pepper.
Roast on top rack until browned and tender, 20-25 minutes.
Swap in green beans for potatoes; roast 12-15 minutes.

Meanwhile, in a large bowl, gently combine beef*, panko, garlic powder, stock concentrate, minced onion, half the ketchup, salt (we used ½ tsp; 1 tsp for 4 servings), and pepper.
Form beef mixture into two 1-inch-tall loaves (four loaves for 4); place on a second baking sheet. Brush tops of meatloaves with remaining ketchup.
Roast on middle rack until cooked through, 15-20 minutes.

While potatoes and meatloaves cook, heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add sliced onion and cook, stirring occasionally, until browned and softened, 8-10 minutes.
Add 1 tsp sugar (2 tsp for 4 servings) and a splash of water. Cook, adding more splashes of water as necessary, until onion is caramelized and jammy, 2-3 minutes more. Season with salt and pepper.
Turn off heat; transfer onion to a small bowl. Wipe out pan.

Heat 1 TBSP butter in same pan over medium heat. Add bread and toast until golden brown, 2-3 minutes per side (add more butter and work in batches as needed).
While bread toasts, in a second small bowl, combine horseradish sauce, mayonnaise, and half the mustard (all for 4 servings). Set aside.

Lay toasted bread out on a cutting board. Top half the bread slices with caramelized onion; spread remaining bread slices with sauce (save some for serving).
Cut each meatloaf crosswise into four slices; fan out slices over bread topped with caramelized onion. Close sandwiches and cut in half.
Divide sandwiches and potato wedges between plates. Serve with remaining sauce on the side for dipping.
This takes a lot of work for a sandwich dinner/lunch. I would suggest using the whole onion to give more caramelized onions. Spread was very good. It would have been easier to just butter the bread and put it under the broiler than to try to fry in a pan. Maybe replace the potato wedges with chips or a salad.
This was a good meal to make. The caramelized onions made the meatloaf taste better and I hardly noticed the Mayo dijin mustard and horseradish sauce on it. I cooked everything in a different way it said to cook it and it still ended up delicious.
The meatloaf sandwiches with the carmelized onions and creamy horseradish sauce absolutely delicious. I added old bay seasoning to potatoes and cut them a tad bit smaller than instructed so they cook through and tasted more like French fries
The sandwiches were delicious! The caramelized onion, beef, Dijon mayo, toasted sourdough, all meshed well together. The potatoes did not come out crispy, they were sort of oil logged. I think they needed to be cooked a lot longer.
Soooo good! Not your mama's Meatloaf! I forgot to pick my meals one week and I was not excited about seeing Meatloaf in my box. But yall...with the caramelized onions and the sauce....chefs kiss. I'll definitely reorder this meal!
Very surprised by this. The meat loaves were very tasty. The onions didn't caramelize like the picture, didn't "jam" up. I make my own onion jam, which I added. The bread didn't hold up, got soggy & fell apart, so ended up eating it with a fork.
I didn't pick this dish - just didn't choose recipes on time and it's what you sent. Was totally expecting not to like it. BUT, I loved it!! The meatloaf and carmelized onions were unbelievable!!!! When I make it again for myself I will choose a lighter side rather than the potato wedges.
Oh Mon Dieu!! We love juicy pub style hamburgers and this meal was just that and more!!! I didn't realize making carmelized onions was so simple. We're learning a lot of cooking tricks like that- that are simple and so delicious. We LOVED the horseradish sauce-- sooooo yummy! Will definitely reorder this meal.
I love meatloaf sandwiches! Never had them warm though. I was so looking forward to this but was disappointed with the meatloaf. Even cold in a sandwich the next day it was lacking flavor. Needed Italian seasoning and sage. I would have also used mushroom stock in the meatloaf. I probably would not get this one again.
We did not eat these as sandwiches. The meatloaf size and bread size just didn't match. And seemed like a bit to much to get my mouth around anyway. But even eating the component parts was great. I don't eat a lot of beef but have really enjoyed both of the little individually size meatloafs I've had in these kits.
