Crunchy chicken is always a recipe for success. Add tender green beans and buttery garlic bread to the mix, and you’ve got a winning dinner. The chicken’s swiped with a tangy-sweet honey Dijon dressing, then sprinkled with melty Monterey Jack and crispy fried onions. Once baked, the crust turns golden brown while the meat stays juicy and tender. Winner winner chicken dinner!

Cooking Steps

Roast Chicken
1

• Adjust rack to middle position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Place 2 TBSP butter (3 TBSP for 4) in a small bowl and bring to room temperature. • Pat chicken* dry with paper towels and season all over with salt and pepper; place on one side of a baking sheet (spread out across entire sheet for 4). • Brush tops of chicken with ½ TBSP honey Dijon dressing (save the rest for serving). Sprinkle with Monterey Jack. Crush crispy onions in their package, then sprinkle over cheese, pressing to adhere. • Roast on middle rack for 5 minutes (you’ll add more to the sheet then).

Roast Green Beans
2

• Meanwhile, wash and dry produce. Trim green beans if needed. • Once chicken has roasted 5 minutes, remove sheet from oven. Carefully toss green beans on empty side with a drizzle of oil; season with salt and pepper. (For 4 servings, leave chicken roasting; add green beans to a second baking sheet and roast on top rack.) • Return to middle rack and bake until green beans are tender and chicken is browned and cooked through, 12-15 minutes more.

Make Garlic Bread
3

• Meanwhile, combine softened butter with garlic powder to taste. Season with salt and pepper. • Halve and toast ciabatta. Spread cut sides with garlic butter. Cut each half on a diagonal.

Finish & Serve
4

• Toss green beans with 1 TBSP plain butter (2 TBSP for 4 servings) until melted. Season with salt and pepper. • Divide chicken, green beans, and garlic bread between plates. Serve with remaining dressing on the side.

The Dijon & onion is so flavorful and delicious. However, I prefer the other onion crunch chicken meal. That one comes with potatoes rather than garlic bread. This bread is far too thick so you don't get much garlic butter flavor and it's boring. The cheese on the chicken is very unnecessary. You can barely taste it with the Dijon and onions. I imagine it's put there just to differentiate this from the other similar meal. But if you ask me, it's just extra fat and calories.

The fried onion crust was good and the crunch held up well. The family thought honey dijon flavor was lost and a little greasy from the cheese. Next time, we will use less cheese and maybe toss the cutlet with some garlic in addition to the honey dijon. We had a little of the honey dijon left and drizzled that on the green beans. The only challenge for the whole things was the garlic bread--the 11 and 13 year old sous chefs were a little confused about the need to toast the sliced rolls then add the garlic butter and re-toast.

Very quick and easy, the green beans were crisp. Using honey dijon and crispy onions is a great combo for the chicken. A nice home cooked meal after a long day of work. The bread oooooo the bread so good.

The honey-dijon/cheese/fried-onion topping on the chicken really keeps it moist while the cheese browns nicely and the onions give a nice crunch. Much better than most breading. Green beans need a little extra something, though.

This meal was one of the easiest to prepare. The honey mustard, cheese and crushed onion crust on the chicken was fantastic. Garlic bread and green beans were quick and easy sides. I did put some of the garlic powder with a spray of olive oil on the green beans, and this would be a good addition to the directions.

This meal was quick, easy and delicious, the dijon mustard added superb flavors to the chicken, the onions added a delicious crust and the cheese brought this whole meal together. The roasted green bean contained perfect flavor and was a great side to this dish.

One of my favorites. Love having garlic bread instead of potatoes or rice. The Dijon mustard, crunchy onions and cheese makes the chicken so delicious.

Garlic Bread & crunchy onions are always a winner with my family! Kids cleaned their plates! We made extra garlic butter & put that over the green beans when they finished - Delicious!!
