
If you have one pan and 15 minutes, you're ready to get this filling, flavorful salad on the table in a snap. You'll sauté chicken, add in our quick-cooking whole grain blend, then toss it all with fresh spinach and creamy, tangy green goddess dressing. Finish with a sprinkle of crumbled feta for a speedy meal that can't be beat!

10 ounce
Lemon-Herb Diced Chicken Thighs
1 unit
Microwavable Grain Blend
teaspoon (tsp)

1 tablespoon (tbsp)
Olive Oil

teaspoon (tsp)
Salt

Heat a drizzle of oil in a large pan over medium-high heat. Open package of chicken* and drain off any excess liquid. Add chicken to pan and cook, stirring occasionally, until beginning to brown, 2-4 minutes (you’ll add more to the pan then).

Meanwhile, gently squeeze package with grain blend to separate grains; open package.
Add grain blend to pan with chicken; stir in 2 TBSP water (4 TBSP for 4 servings). Cover and cook, stirring occasionally, until grain blend is warmed through and chicken is cooked through, 2-4 minutes. Taste and season with salt and pepper.

While chicken and grains cook, wash and dry produce.
In a large bowl, combine dressing, yogurt, a large drizzle of olive oil, and a pinch of salt and pepper.

To bowl with dressing, add spinach and chicken and grains; toss to coat. Taste and season with season with salt and pepper.
Divide lemony chicken and grains salad between shallow bowls. Sprinkle with feta. Serve.

The lemon sauce/dressing was sooo yummy. Loved the hearty grains. Good cold the next day (but the grains had absorbed all that tasty sauce-bummer)

The lemon component was missing. The goddess dressing was more pesto flavored than anything and there was literally no lemon in the recipe whatsoever.
Not in love with this meal but I'd probably get it again considering how easy it was to make. I should probably cook the spinach next time with the chicken/grains instead of leaving it raw (also added in my own arugula to make the salad bigger)
I thought the taste of chicken, grain, and spinach was good. The chicken thighs were too rubbery for me, I'd have preferred chicken breast; and the spinach became a little slimy with the dressing. So overall the flavors were good but the consistency of everything together wasn't appealing.
