• Massage grain blend in package to separate grains; partially open package. Microwave until warmed through, 1 1⁄2-2 minutes. • Spread grain blend out on a plate to cool slightly.

• Wash and dry produce. • Quarter lime. Trim and halve cucumber lengthwise; cut crosswise into 1⁄2-inch- thick half-moons. Quarter tomato lengthwise; slice into 1⁄4-inch-thick quarter-moons. Trim and thinly slice scallions.

• Crush peanuts in their bag (use a rolling pin or a heavy pan). • Heat a small dry pan over medium- high heat. Add peanuts and cook, stirring occasionally, until golden and fragrant, 2-3 minutes. Turn off heat; transfer to plate with grain blend.

• Meanwhile, in a large bowl, whisk together vinegar, chili sauce, 2 TBSP olive oil, a squeeze of lime juice, and as much Sriracha as you like (for 4 servings, use 4 TBSP olive oil and a big squeeze of lime juice).

• To bowl with dressing, add mixed greens, cucumber, tomato, scallions, grains and peanuts, half the crispy onions, half the wonton strips, salt, and pepper. Taste and season with more salt and pepper and a squeeze of lime juice if desired.

• Divide grain salad between shallow bowls; top with remaining crispy onions and remaining wonton strips. Serve with remaining lime wedges on the side.
What is not to like about a recipe that is so good and requires no chopping or grating or cooking. I absolutely love this, the chili vinaigrette was fantastic. It helped bind everything together - I hate when salads have things like nuts and they all wind up at the bottom of the salad but everything mixed together nicely so I got a nice mix with every bite. Absolutely love this, and I will probably order it again.
I served this and half of us thought it was the best thing ever. The others hated warm grains with cold salad. So, it's a personal preference. I thought it was tasty and would make again.

It was great - but I also whisked in 2 tbsp of peanut butter to the dressing to tie in the crushed peanuts. It coated everything nicely and cut the dressing from being overly spicy :)
It was pretty tasty but just a really small amount of food for two people again, also would've been more satisfying if it had tofu or another high protein source. The "grain blend" didn't say what grains it was, which is dangerous for people with allergies or intolerances.
I was a bit hesitant as I wasn't sure how the ingredients would come together but it has become my underrated favorite. So fresh slightly sweet and spicy. A perfect flavor combination.
This is such an easy, refreshing, and healthy meal. That kick of spice with the sriracha (which is of course optional), was perfect in the dressing. So good!
