Ground beef is infused with scallions and BBQ seasoning, then the shaped loaves are covered with a simply irresistible BBQ glaze. Add a side of roasted green beans and shingled potatoes drizzled with scallion crema, and you may just be calling home to give your parents a cooking lesson!

  • Cut broccoli florets into bite-size pieces if necessary.

  • In a large bowl, toss potatoes with 2 TBSP oil (4 TBSP for 4 servings) and a couple big pinches of salt and pepper until thoroughly coated.

  • Add potatoes to one side of prepared sheet in a single overlapping layer (for 4, spread potatoes out across entire sheet). TIP: Be sure to shingle the potatoes in a single layer so they cook evenly.

  • Swap in broccoli for green beans.

  • Meanwhile, in a second small bowl, combine sour cream with scallion greens to taste (we used half); season with salt and pepper. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.

GLAZE LOAVES

  • Leave broccoli on sheet and cook through remaining step as instructed. (If meatloaves are done before broccoli, remove from the sheet, then continue roasting broccoli until browned)

Yes! I prefer Meatloaf with a BBQ base vs ketchup & for sure Beef. Not sure too many folks want a pork Meatloaf, which is why I rarely order previous choices.

I've never had a Hello Fresh Meatloaf that I didn't LOVE!! And in all honesty, I would not eat meatloaf before we had Hello Fresh the first time years ago. You made me a believer!!

Loaves were good. Beans, well they are beans. Not much to do to make them better. No additional Broccoli with ours and missing a spice. A suggestion for the potato medallions: We grated parmesan cheese over all of them on a greased sheet pan. Then we flipped each medallion over and pressed the cheese on other side. We first baked the medallions for about 15 minutes. Then we pressed the cheese on-top. Then baked again. The soft potatoes with the crunchy cheese was fantastic!!!!!

I loved this meatloaf and got two veggies. Wanted more carb smart. Not sure what happened but I didn't choose the next two that are being delivered.
