• Halve buns; toast until golden brown.
• Wash and dry produce.
• Slice tomato into ¼-inch-thick rounds. Season with a pinch of salt.
• Pat chicken dry with paper towels. Thinly slice crosswise into strips.
• In a medium microwave-safe bowl, toss chicken with half the Mexican Spice Blend (all for 4 servings), a drizzle of olive oil, and a pinch of salt and pepper; sprinkle with Monterey Jack. Cover bowl with plastic wrap and microwave until chicken is warmed through and cheese melts, 1-2 minutes.
• Meanwhile, in a small bowl, combine guacamole and mayonnaise.
• Spread cut sides of buns with creamy guacamole. Using tongs or a slotted spoon, fill buns with cheesy chicken; top with tomato. Divide sandos between plates and serve.
Portion was great and so were the flavors. Were on the fence with this one but was actually one of our favorites! The guac spread made this meal! We dipped and ate every last bite.
This was a very tasty sandos but very difficult to eat. The sandwich was so large that I could not get my mouth round it. Perhaps a less thick bun would have helped. I tried eating it as an open face sandwich but that was very messy. I think I might like it with sourdough bread instead of the bun.
I enjoyed this. Plenty of tender chicken and sauce. I didn't use the sliced tomato on the sandwich because I didn't think it would stay together with that and the chicken and the sauce. The cheese got kind of lost in the heating process so, I think I would mix it in after heating the chicken next time.

Flavor was alright but that was mostly from the guac, bun and mayo. Wasn't a huge fan of the chicken. A tad dry. Could be my own fault because I don't have a microwave and had to cook it on a pan. Tomato came with a split down the middle and was not very red. Didn't look like the freshest tomato.
Man! This was the best sandwich I ever et! That tomato was not pretty but it sure did bring out the flavors in that guac! Just lovely!
This was a quick and easy meal for a busy night. Got it with the tomato soup, which made for a perfect meal.
This was a definite do-over! Easy, peasy prep; the spices were fantastic; & there was plenty of chicken left over for my extremely picky 6 y/o to enjoy a small bowl of her own.
These are SOOO GOOD! It feels like such a lil hidden gem. The flavor and textures are perfection. My only thing is - there's left over chicken every time I've made this, but I can't fit anymore on the sandwich. So we either need larger buns or an extra bun or somehow, less chicken. But it's a favorite for sure!!
Super easy and tasty! I don't like tomatoes so I replace with roasted red pepper slice and it was perfect!
