Cuban-Style Slow-Cooked Beef

FOR THE OVEN Adjust rack to middle position and preheat oven to 350 degrees. Remove outer packaging and plastic film. Cover rice on tray* with aluminum foil, leaving stew uncovered. Place on a baking sheet and bake on middle rack for 20 minutes. Carefully remove foil and stir stew (leave the rice, beans, and plantains undisturbed). Return sheet to oven and bake, uncovered, until meal reaches an internal temperature of 165 degrees, 20 minutes more. Let stand for 2 minutes and stir. Divide rice, beans, and plantains between plates and serve beef alongside.

Just had this for lunch today and I'm actually quite impressed. The beef was more gristly than I'd have allowed into a recipe, but it was perfectly tender otherwise. Flavors of both the rice and beans and the beef were good, and the plantains were nicely noticable bit of sweet in each bite. If it weren't for the notable gristle, I'd absolutely eat this again so for those of you who don't mind, I would absolutely recommend.
I really enjoyed the beef in the tomato sauce-not really Cuban style but good anyway. This has been my favorite readymade meal so far.
I was skeptical because it was my first "ready to cook" Hello Fresh dinner. My husband and I really enjoyed the Cuban flavors, and the servings were pretty big.
I really enjoyed how tender the beef was and the hearty pieces of peppers. I think the taste of the stew was ok. I was hoping for more of a punch of flavor and maybe just a little heat. I loved the plantains, rice and bean. I would honestly love a giant tray of that.

Best ready made meal ever! I used oven method to heat... while oven was on, I put any extra refrig veggies in oven at same time... carrots potatoes tomatoes...it all coordinated great! I so enjoyed the meal and was happy to reduce refrig waste.
We are getting hooked on these ready to heat meals. Just as good as cooking it yourself without the cleanup. Great options.
This is a great meal, it's just not 2 servings. I tried to portion it out to meal prep, but was so hungry that I ate the whole thing for dinner
Liked the sweetness of the plantains with the other spicy flavors. The texture of the beans & rice is good, too.
This one was too "frozen dinner". The meat definitely did not have the slow cooked texture. Possibly normal for this dish, but we didn't love the plantains diced and mixed in with rice & beans, and that mixture was super dry.
