Cooking Steps

Prep

  • Wash and dry produce.

  • Peel and mince garlic.

Make Polenta

  • Heat a drizzle of oil in a small pot over medium heat. Add half the garlic; cook, stirring, until fragrant, 30-60 seconds. Add polenta, half the Fry Seasoning (you’ll use the rest later), ½ cup water (1 cup for 4 servings), salt, and pepper. Mash with a potato masher until mostly smooth, 1 minute (any remaining lumps will be broken up when whisking).

  • Whisk in cream cheese and 1 TBSP butter (2 TBSP for 4); simmer, stirring occasionally, until thickened, 3-4 minutes. Taste and season with salt and pepper if desired. TIP: If polenta seems too thick, stir in a splash of water.

  • Keep covered off heat until ready to serve.

Toast Seasoning

  • Heat a large dry pan over medium-high heat. Add Everything Bagel Seasoning; toast, stirring, until fragrant and slightly darkened in color, 1-3 minutes.

  • Turn off heat; transfer to a plate and set aside. Reserve pan.

Cook Spinach

  • Heat a drizzle of oil in same pan over medium-high heat. Add spinach and remaining garlic; season with salt and pepper. Cook, stirring, until wilted, 3-4 minutes.

  • Turn off heat; transfer to a plate. Wipe out pan.

Cook Salmon

  • Pat salmon* dry with paper towels; season all over with remaining Fry Seasoning, salt, and pepper.

  • Heat a drizzle of oil in pan used for spinach over medium-high heat. Add salmon, skin sides down; cook until skin is crisp and fish is almost cooked through, 5-7 minutes. Flip and cook until cooked through, 1-2 minutes more.

Serve

  • Divide polenta between shallow bowls. Top with spinach and salmon. Drizzle with sour cream and sprinkle with toasted Everything Bagel Seasoning. Serve.
