These meatballs are a game-changer thanks to firecracker sauce—a creamy, spicy, sweet, and savory sauce that’s so good, it’ll make your taste buds explode! Once the meatballs are baked, they’re tossed in the magical condiment, then plated atop rice along with crispy roasted green beans. Don’t be surprised when you find yourself swiping up every last drop.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1

• Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry produce. • Trim and thinly slice scallions, separating whites from greens; mince whites. Peel and mince ginger.

Make Firecracker Sauce
2

• In a large bowl, combine mayonnaise, sour cream, honey, 2 tsp Kikkoman® Traditionally Brewed Soy Sauce (4 tsp for 4 servings), and Sriracha to taste. (You’ll use the rest of the soy sauce later.) Set aside.

Cook Rice
3

• In a small pot, combine rice, ¾ cup water (1½ cups for 4 servings), and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.

Form Meatballs
4

• While rice cooks, in a second large bowl, combine beef*, panko, scallion whites, ginger, remaining Kikkoman® Traditionally Brewed Soy Sauce, salt (we used ¾ tsp; 1½ tsp for 4 servings), and pepper. • Form into 10-12 1½-inch meatballs (20-24 for 4).

Roast
5

• Place meatballs on one side of a lightly oiled baking sheet. • Trim green beans if necessary. Toss on empty side with a drizzle of oil, salt, and pepper. (For 4 servings, divide between 2 sheets; roast meatballs on middle rack and green beans on top rack.) • Roast on top rack until meatballs are cooked through and green beans are browned and tender, 14-16 minutes.

Finish & Serve
6

• Fluff rice with a fork; season with salt and pepper. • Carefully add meatballs to bowl with sauce; toss to coat. • Divide rice between bowls or plates. Top with meatballs and drizzle with any remaining sauce. Serve green beans on the side. Garnish with scallion greens.

Ground Beef is fully cooked when internal temperature reaches 160°.

  • Suggestions: Consider reducing salt, especially with soy sauce; add more sriracha for extra heat if desired.
  • Portions: Several wished for more rice or meatballs to feel fully satisfied; green bean quantity sometimes fell short.
  • Texture: Some found meatballs tender and juicy; others experienced dryness or mushiness.

It took a little extra effort for these but they were very good. My personal tastes would prefer a little less soy sauce and maybe more of a hoisin or sesame flavor. I'd also suggest a little extra sriracha in case the firecracker sauce needs more pop for you.

It was delish! The sauce that went with the meatballs were excellent. I even added some of the fresh ginger to the rice when I was cooking it. I will definitely use that sauce again & I will order that meal again.

That was so yummy! I did not expect ginger in my meatballs to be so tasty! We loved the sauce and the ease of this meal! We put the meatballs on the same sheet in the oven as the greens and it cooked in 20 min! Right as the rice finished.

This dish was amazing. The flavor in the meatballs was great and the sauce just put it over the top. My husband and I put it all together in a bowl and devoured it, he was hoping for more.

The meatballs were so tender and delicious. I added extra sriracha to the sauce, but no other tweaks needed

Always a favorite. The meatballs have a little kick of spice while the roasted green beans are as healthy as it gets.

Recipe calls for soy sauce to be added to the meat, AND salt, which makes the meatballs waaaaay too salty. Just FYI.

This is the best meal that I have yet to receive. I didn't even know that I can make meatballs! These things are on fire! No pun intended! This is extremely delicious and so out of my ballpark that I didn't think it was possible but I did it quickly and everybody loved it
