• Wash and dry produce.
• Massage grain blend in package; partially open top. Microwave until heated through, 90 seconds. Transfer to a large bowl and stir in stock concentrates, salt, and pepper; let cool. TIP: For faster cooling, transfer bowl to fridge.
• Dice mozzarella into ½-inch pieces. Halve tomatoes.
• In a small bowl, whisk together vinegar, half the mayonnaise, half the mustard, and ¼ tsp sugar until well combined. (For 4 servings, use all the mayonnaise, all the mustard, and ½ tsp sugar.) Gradually whisk in ¼ cup olive oil (½ cup for 4) until creamy. Season with salt and pepper.
• To bowl with grain blend, add arugula, half the mozzarella, half the tomatoes, and as much dressing as you like; toss to combine.
• Divide grain salad between bowls; top with almonds, remaining mozzarella, and remaining tomatoes. Drizzle with any remaining dressing and serve.
This is a nice, filling take on a classic. The grain mix is tasty. We don't use a microwave, so I heated it in a nonstick pan with a tablespoon of water. I added some minced garlic to both the grains and the dressing (which called for too much balsamic for our taste, so we modified it). All in all it was easy to tailor it to our liking, and it was quick and wholesome.
I usually eat spinach as my salad base instead of lettuce for greater nutritional value, but it gets tiresome after awhile. It was nice to have arugula as the greens in this dish, and the grains blend & fresh mozz were a nice twist as well! Very tasty and hardly took the blink of an eye to be ready to eat... I did add some scallion as well and instead of trying to halve the dressing ingredients I just made the full dressing for four, I'm sure I'll figure out a way to use the extra.
We had this for dinner and it was quite delicious and filling. The grains had great flavor and the almonds which I toasted in a small dry pan were a nice crunch to the dish. The peppery arugula rounded the dish out nicely.
Nothing. This is our favorite dish so far. I did substitute our fresh from the garden tomatoes and romaine instead of arugula, but the flavor of the grains, the dressing and the combination of ingredients was delicious.
We were excited to try the caprese grain bowl since we love caprese salads and sandwiches. Unfortunately, it was a bit disappointing. First, the dressing was strange with its mayonnaise and mustard base...not bad but not the usual zippy balsamic type dressing we are used to. Also, the entire dish lacked any fresh basil, which is key to any caprese dish in my opinion. If we order this again, I'll buy some of my own basil to add.
I am trying many of these grain bowl recipes and am loving them. Please give us some more this summer. Is there any other cheese besides mozz that could be used. I am getting a bit tired of mozz!
This grain bowl was absolutely perfection! I wanted a light dinner and to have lunch the next day at work so it was perfect for both of those occasions. Looks so delicious people walking by kept asking "where did you go for lunch?"
With just the tomato, mozzarella, and arugula this would have been a very light lunch but add the nutty whole grain rice and it was healthy and hearty!
Loved the grain mix, with the arugula, this was really good, and I'm giving 4 stars but it needed double the dressing.
Super quick and healthy meal for us. Fresh mozzarella and arugula make it a great choice for catching up with the greens!
