Cooking Steps

Prep
1

• Wash and dry produce. • Trim and thinly slice scallions, separating whites from greens. Roughly chop walnuts. Zest and quarter lemon. Drain and rinse beans.

Make Gremolata
2

• In a small bowl, combine scallion greens, walnuts, 2 tsp olive oil (4 tsp for 4 servings), juice from one lemon wedge (two wedges for 4), a pinch of lemon zest, a pinch of salt, and pepper.

Mash Beans
3

• Heat a drizzle of oil in a small pot over medium-high heat. Add scallion whites; cook, stirring constantly, until fragrant and tender, 30-60 seconds. • Stir in beans, stock concentrate, ¼ cup water (½ cup for 4 servings), a pinch of salt, and pepper. Bring to a boil, then reduce to a low simmer. Cook, mashing about half the beans with the back of a wooden spoon, until beans are creamy and thickened, 3-5 minutes. • Remove from heat and stir in crème fraîche. Taste and season with salt and pepper if desired. Keep covered until ready to serve.

Cook Pork
4

• While beans cook, pat pork dry with paper towels and season all over with Italian Seasoning, salt, and pepper. • Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-6 minutes per side. • Turn off heat; transfer to a cutting board and tent with foil to keep warm. Let pan cool for 1 minute, then wipe out pan.

Swap in chicken for pork; cook until cooked through, 3-5 minutes per side.

Make Pan Sauce
5

• Heat same pan over medium heat. Add jam, ¼ cup water (½ cup for 4 servings), and 1 TBSP butter (2 TBSP for 4); cook, whisking, until butter has melted and sauce has thickened, 1-2 minutes. Remove from heat.

Finish & Serve
6

• Slice pork crosswise. • Divide beans between shallow bowls and top with sliced pork. Spoon pan sauce over pork and top with gremolata. Serve with any remaining lemon wedges on the side.

Slice chicken crosswise.

Chicken is fully cooked when internal temperature reaches 165°.

I loved it, my partner was 'meh'. We don't often disagree on foods, but we did on this one. I'll still make it on occasion, though. It wasn't time-consuming to make, but it required timing. This one was a bit challenging to make sure everything came together on time. I've figured out that this recipe in particular can do with some things being made a little ahead, like the gremolata. I can do the beans beforehand, too, but will need to reheat them before serving.

This was one of the best recipes ever! Everyone (4) loved it! The gremolata made it very special. My son who is a bit of a foodie, said it was better than a restaurant meal.

I really like the stewed white beans, something different from the usual rice and potatoes. I also loved the combination of different flavors and textures. Just a really great meal!

I am using the stewed bean side again! I added some lemon zest and Red pepper flakes to it. Yummy! Also loved the gremolata!

Excellent mix of flavors. The walnuts really make the dish special. I love that there are mashed beans instead of mashed potatoes or rice (both of which I hate).

I was not crazy about the cannellini mashed beans; they were OK. Would prefer mashed black or pinto beans. I liked the chicken with the Italian seasoning and the walnut gremolata with the green onions and lemon. That was very flavorful.

Texture of the walnut gremolata was not my favorite but the herbed chicken was great and the flavor was great. A crunchy texture in the gremolata was not my favorite.

Both my husband and I enjoyed having the beans instead of mashed potatoes. We received asparagus spears too so we had that along side this dish. Awesome!

I was very disappointed in the amount of food in this recipe. Although it was delicious, it did not have enough ingredients for 2 people. The chicken amount was fine but the beans were not enough especially with no other veggies with this. This was not worth the $$.
