Serve those rainbow roll-ups with juicy apple and orange slices, fresh mozzarella cheese, and crunchy blue corn tortilla chips. And the very best part? • Wash and dry produce. • Trim and halve cucumber lengthwise; lay flat and cut into ½-inch-thick sticks. Trim and discard root end from lettuce; separate leaves. Halve, core, and thinly slice apple. Halve orange; slice crosswise into ½-inch-thick half-moons. Cut mozzarella into ½-inch pieces.

• Place cream cheese in a small microwave-safe bowl; cover with plastic wrap. Microwave until softened, 15-30 seconds. • Add dressing to bowl and whisk to combine.

• Wrap tortillas in damp paper towels; microwave until warm and pliable, 30 seconds. Lay tortillas on a clean work surface. • Evenly spread ranch sauce over tortillas. Add as many shredded carrots as you like to bottom two-thirds of each tortilla; top with cucumber sticks and lettuce leaves. Lightly season with salt and pepper. • Roll up tortillas, starting with filled sides, to create roll-ups. Halve roll-ups on a diagonal.

• To serve: Divide veggie roll-ups between plates and serve with apple slices, orange slices, mozzarella, and tortilla chips on the side. • To stash: Refrigerate veggie roll-ups, apple slices, orange slices, and mozzarella in separate containers and pack as desired!

I like getting your kids meals even though I don't have kids. They're good for a quick work lunch or girl dinner. The are easy to put together, healthy, and they taste good.
I don't feel like kids would be super enthusiastic to have salad wraps. I added some deli meat to mine to make it more appealing to my child. I understand this is probably popular with vegetarian children, so take my opinion with a grain of salt.
These worked out well for my daily lunch. I ended up browning the tortilla a little in a dry skillet though as the first one I had was soggy. I also upgraded it with some deli turkey.
My 8 year old followed the directions with help and loved having a meal just for her.
These were soooo yummy. My husband was disappointed that this was dinner BUT when he took a bite he was amazed! Very flavorful.
The grandchildren had great fun making their own lunches with this one and they ate up every morsel.
These were crunchy and great! I'm an ovo-lacto vegetarian, and I would've liked more protein (ie:cheese - maybe a white cheddar?). My child wouldn't eat it until I added lighthouse brand ranch.
