Wash and dry produce. • Cut each pita into eight triangles. • Toss pita triangles on a baking sheet with a large drizzle of olive oil, salt, and pepper. I know this is supposed to be six servings, but it is awkward to cut four of anything (especially the cucumbers and waffles) into six portions. We ended up with five. I'd love to see a cucumber per portion, and suggest cherry tomatoes instead of sliced tomatoes to keep tomato juice from getting all over everything. I swapped the tomatoes with my crispy falafel bag.
