This 15-minute snack is perfect for serving now or making ahead—a kid-approved smorgasbord complete with savory hummus, homemade crispy pita chips, sliced cheddar cheese, and cucumber, tomato, and orange slices, plus a sweet treat of waffle sticks. That’s right: We’re thinking outside the lunchbox (so you don’t have to!). This recipe is designed to provide lunch for multiple days. For each lunch meal, 3 servings and 6 servings are provided for a 2 person and 4 person box respectively.

• Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. • Cut each pita into eight triangles. • Toss pita triangles on a baking sheet with a large drizzle of olive oil, salt, and pepper. Bake on middle rack until lightly browned and slightly toasted, 6-10 minutes. • Remove from oven and set aside to cool on sheet. TIP: Pita chips will crisp up as they cool.

• Thinly slice cucumbers into rounds. • Halve tomato lengthwise, then lay flat and thinly slice into half-moons. • Halve orange; slice into ½-inch-thick half-moons. • Cut waffle into 1-inch strips.

• To serve: Divide hummus, pita chips, cucumber rounds, tomato slices, orange wedges, and cheddar between plates. Serve waffle sticks on the side. • To stash: Refrigerate hummus, pita chips, cucumber rounds, tomato slices, orange wedges, cheddar, and waffle sticks in airtight containers and pack as desired!
I know this is supposed to be six servings, but it is awkward to cut four of anything (especially the cucumbers and waffles) into six portions. We ended up with five. I'd love to see a cucumber per portion, and suggest cherry tomatoes instead of sliced tomatoes to keep tomato juice from getting all over everything. I swapped the tomatoes with my crispy falafel bag.
Very easy to make just chopping! Plus it encourages my little ones to try something new, plus some familiar bites on their plates.
We loved that we were able to put the items out like a charcuterie board and everyone could pick what they liked. Easy to supplement the items so spread for more people to eat.
As an adult, I really enjoyed the tasty, healthy snack. I have enough snacks to last a few days. Please make this meal option (and other similar healthy options) available often.

I repurposed these ingredients, added a few of my own, and made an adult charcuterie board snack tray. Whatever orange they sent me was absolutely delicious.
I loved taking these to the office. Everything was grab and go which is essential.
The only thing we don't care for is the waffle. My kids figured out they liked hummus because of this one.
Hummus and pita bread was good, veggies and fruit were boring - I'll try dipping veggies in hummus.
