This quick and easy lunch of turkey and gouda pinwheel sandwiches, crudité, chips, and dried fruit is not only kid-approved and customizable, it’s a recipe you can make and pack along with your budding chef (a great way to sneak in those “life skills” lessons!). Or do it yourself while they squirt toothpaste all over the bathroom—either way, you can cross “lunch hero” off your list in no time. This recipe is designed to provide lunch for multiple days. For each lunch meal, 3 servings and 6 servings are provided for a 2 person and 4 person box respectively.

Blue Corn Tortilla Chips

Dried Cranberries

Mayonnaise

Dried Apricots
2 slice
Gouda Cheese
(Contains: Milk)

• Wash and dry produce. • Halve gouda slices. Trim, peel, and cut carrot into sticks (like fries; ours were 3 inches long and 1⁄3-inch thick). Thinly slice cucumber into rounds. • In a small bowl, combine dried apricots and dried cranberries.

• Wrap tortillas in damp paper towels; microwave until warm and pliable, 30 seconds.

• Place tortillas on a clean work surface; spread with as much mayonnaise as you like. Evenly fill bottom two-thirds of each tortilla with gouda slices and 3-4 turkey slices (we sent more; use as many or as few as you like!). • Starting from bottom of tortilla, roll tightly into a tube, then trim off curved short edges; discard edges. Repeat with remaining tortilla. Slice each roll crosswise into 8-10 pieces.

• To serve: Divide pinwheels between plates with carrot sticks, cuke rounds, dried fruit mix, and tortilla chips on the side. • To stash: Store everything in separate containers in the refrigerator and pack as desired!
I wanted to get this because I hadn't seen anything like this on the HelloFresh site before. It was one of my favorite recipes from the week because it came with the blue corn chips (I've gotten them with some of the other recipes on the site and they're delicious) and I had a fun time making the pinwheels. The veggies were a great addition because they added more of a "crunch" factor to the meal and the dried fruit added a really nice sweetness!
I always order a kids meal for light lunches or dinners for me. These were really good! I put the carrot sticks, cucumbers and dried fruit with the turkey and cheese inside my tortilla. Winner!
Really good but wish the veggies weren't so small. The cucumber was 3in long and had the circumference of a dime. The carrot was maybe 4in long and maybe the circumference of a nickle. The veggies could only be used for one of the servings unless you are feeding a toddler. I use these as quick adult lunches.
3 1/2 stars, the half taken off is because there was not enough cheese in there and too much meat and tortillas, also we did not like the chips at all. However my daughter had a lot of fun helping me make these especially folding up the tortilla and she ate everything in 2 days so in general it was a great snack for her/the family!
Son really liked the pin wheels he bought more ingredients at the store for summer snack. Love love the blue chips should get more option to add for snack options
Excellent travel-friendly lunch! I liked to put the dried cranberries and apricots IN the pinwheels so it wasn't just meat and cheese :)
So glad you started doing kids meals! My son is not wanting to eat what we make for ourselves, and we were alternating between lunchables and uncrustables for his lunches. This option is so much better. Even if he doesn't eat it all, at least I am giving him healthier options.
These were very good! I added some dijonnaise mustard sauce. They were very easy to make and a delicious lunch! My cucumber was shriveled and soft so I did not eat it. (I reported it and the customer service rep gave a small refund).
I know they're geared towards children but I love these to make and pack ahead for work lunches, and for that reason I love that they include snacks.
