  • Using a zester or the smallest holes of a box grater, grate Parmesan. Quarter lemon.

  • Heat a large drizzle of oil in a large pan over medium-high heat. Add chicken to hot pan. Separate chicken strips; heat, stirring occasionally, until warmed through, 2-4 minutes.

  • Reduce heat to low. Add marsala sauce and simmer, stirring, until chicken is coated and sauce is heated through, 30-60 seconds.

  • Place spinach in a large bowl. Once grains are warmed through, add to bowl with spinach along with garlic herb butter and Parmesan; stir until thoroughly combined and spinach has wilted. Season with salt and pepper.
