Bring a large pot of salted water to a boil. Once boiling, add tortelloni to pot. Reduce to a low simmer; cook until tender and floating to the top, 3-4 minutes. Reserve ¼ cup pasta cooking water, then drain.
Return same pot to medium heat. Add cream sauce base and cream cheese; bring to a simmer, whisking, until smooth, 1-2 minutes.
Reduce heat to low and whisk in cheddar until melted and smooth. Stir drained tortelloni into pot with sauce. If needed, add reserved pasta cooking water a splash at a time until pasta is coated in a creamy sauce. Season with salt and pepper to taste.
Truly a quickie 10 minute dish and tasted good. It's like Mac and cheese, but with tortellini.
I mixed up the order of process but it was still delicious. Very filling and super fast to make.
Great for fast dinner and you can add things to dress it up.
Sooooo cheesey. Needs something to help cut the cheese. Now that I know I would use it as a side.
Very cheesy and quick. Added some tomatoes and eggplant for a meal.
While the pasta itself was good and cooked well. I can't believe I am going to say this. It was just too much cheese to be enjoyable
Felt like there wasn't enough sauce ingredients for the portion size
